Michelin-starred Sushi Matsumoto in Itabashi, the sixth and last 🍶. It's been a long time since I've been to Loman. I used to love drinking it when I first started drinking sake. I remember Romain as a very sweet sake made from mochi rice with a four-step brewing process, but this one is quite good with a restrained sweetness 😆.

Michelin-starred restaurant in Itabashi, 5th in Sushi Matsumoto 🍶. This is my first time to see Aizan on a pack tag. The explanation on the back label says Aizan was popularized by Takagi Sake Brewery. I didn't know that.... Sake Mirai is a sake rice developed by Takagi Shuzo, so Takagi Shuzo is really great. This one is the best of the day with the Yoshida Brewery. It is just barely sweet enough not to interfere with the meal. It has a very good balance of various elements such as sweetness and acidity. I like all of the sake brands, but I think this one is the best.

Michelin-starred restaurant in Itabashi, 4th 🍶 at Sushi Matsumoto. Isobojiman is a famous sake brewery in Shizuoka. It is no exaggeration to say that today's Niimasa is possible thanks to Isobojiman. I like how they use Tojo's Yamada Nishiki but don't show it off at all. ❓️ Every brewery writes "Tojo Yamada Nishiki" on their website! It seems to be a bit sweet for Isobojiman. And if they didn't say it was a honjozo, I wouldn't know it was an aruze.

Michelin-starred restaurant in Itabashi, 3rd 🍶 at Sushi Matsumoto. Yoshidagurau, another brand of Tedorigawa, is a light, slightly effervescent sake. The alcohol content is 9 degrees Celsius. I thought it was low, but I didn't expect it to be this low. I was surprised to see the back label. It may not be a good way to describe it, but it looks like Shinmasa. This is delicious. It might be the best today. I was torn between this and Kafuda, although they are different types. I don't have to decide the number one.

Michelin-starred restaurant in Itabashi, 1st 🍶 at Sushi Matsumoto. Green Naturals I've been wanting to try. The ultimate naturals❓️ low alcohol, 10 degrees in the original. Sour water❓️ not bad, but subtle as sake...^^;

Tonight is Shinsei's Nirvana tortoise. It is low-pasteurized and yeast-free. ❓🤔 But Shinsei also basically uses Kyokai No.6 yeast, so they want to make a difference when they don't use cultured yeast ❓ I don't know anything about brewing, and anything is fine if it tastes good, but I am curious about something. So, Nirvana tortoise. The acidity is low for a Shinsei. Maybe because of that, the sweetness stands out and it feels heavy for its strength. I remember that the Nirvana Kame which I drank before was lighter 🤔 Maybe it is the difference of the lot.

Summer excursion Day 2. We moved from Oku-Nikko to Karuizawa. Speaking of Shinshu, buckwheat noodles are the best! So we went to Seireibashi Kawakamian. The second was Seimasamune. This is also the first time I have heard of this sake in Shinshu. It has a gorgeous taste and aroma. This is good. I also had another sake from Suwa called Mikotsuru, but I don't have a picture of it, so I omitted it!

Summer excursion. We went to Nikko Yumoto Onsen and enjoyed the hot spring. Unfortunately, the weather was so bad that we went directly to the hot spring resort without any sightseeing 🤣 I wonder what the weather will be like tomorrow. So, we had a local Tochigi sake with dinner. I drank the same sake last year, Sawahime's Kasumi Sake. It has a gaseous taste and even though it has a high alcohol content, it is easy to drink.

The birthplace was quickly emptied and I got another bottle ‼️ This is also the first sparring I've had from my favorite Senkin. Second fermentation in the bottle is just like Champagne 😆. I carefully opened the bottle, opening and closing the lid to avoid spilling. Pouring it into an Edo faceted glass, I found it to be nigori sake! I think putting nigori in a faceted glass spoils the beauty of the faceted glass.... I should have chosen a wine glass.... The schwashiness is milder than I expected, and not much different from the sanshin that does not call itself sparring. The taste is stable and delicious, as if it were Senkin. I saw a video of the brewer talking about it on YouTube. I don't know the details, but 🤣.

A red birthplace. Sake rice called Kako. Kako" is "Kabashiko". I can't read it. It's a very typical saké. It's also a very easy to drink sake with low alcohol content. As I expected, I had to go for another bottle of sake because it was empty even though I still had some left over. ‼️🤣. I always think selfishly that Sansho would be perfect for me if it had acidity.... It's still one of my favorite sakes, though.

Forgot to give you a drink the other day. A quick drink at a popular neighborhood izakaya (fish cat) 🍶. It was my first time to try this sake. I thought it would be dry and light because it was called Natsuzake, and since it was alsobe, I thought it would be sharp, but it was sweet and had a lot of volume 😆 Not what I imagined, but not bad.

Forgot to give you a drink the other day. A quick drink at a popular neighborhood izakaya (fish cat) 🍶. Kido from Wakayama. It's only listed as junmai sake, but I guess it's the most standard one ❓🤔 It's sweeter than other Kido's. I don't drink a lot of Kido, so I'm not sure if the Kido I've had so far just happens to be on the dry side 🤣.

I don't have any drinking plans this week, so I'll have a light dinner at home on Wednesday when I turn back 🍶 A convenient 500ml bottle for such occasions 🎵. It is a summer sake, SATIN, from Erhato. It is a low-alcohol, gentle and soft sake. It's quite tasty😃The bottle is a nice cool blue color.

Bimonthly Sushi Matsuura🍣 Sake of the Day Extra Edition Sake poured over brown sugar ice cream, Matsuura's standard sweet. They recreate the old way of making sake. The first half of the ice cream is brown sugar flavor, and the other half is served with this sake, which quickly turns into a rum raisin flavor! I was surprised when I first tasted it. The photo shows another serving of tuna. I couldn't resist both the red and medium fatty tuna, so I had nigiri for the red and torotaku for the medium fatty. This sake is from Kyoto Prefecture. This is my first visit to Kyoto since I started adding it to this application. The map of Japan is getting more and more colorful. The rest are Gunma, Kanagawa, Osaka, Hyogo, Okayama, Kagawa, Tokushima, Ehime, Oita, Miyazaki, Okinawa.... There are many more...^^;. But I wonder if Okinawa has sake...

Bimonthly Sushi Matsuura🍣 Sake of the Day 7 The seventh sake of the day is the Miroku Summer Special Junmai from Otokoyama Honten in Kesennuma. It is so light that it is hard to believe it is 16 degrees Celsius. It has acidity and a slight bitterness. It is a good dry sake that goes well with meals. Undan (sea urchin) will be in season soon. The boiled clams have a nice texture!

Bimonthly Sushi Matsuura🍣 Sake of the Day #6 Tengu Mai. tradition+ series, but modern. I was a little surprised to see that Tengu Mai also has this kind of sake. I've only had Tengu Mai that was slightly matured and had a peculiar taste.... I have not had enough training. The photo shows hokki and hairy crab. I think shellfish are the best in early summer 🎵Hair crab has an image of winter, but it seems to be delicious now.

Bimonthly Sushi Matsuura🍣 Sake of the Day #5 Kuribayashi's rice field label. This is the first time you will see it. It is a limited edition sake only available now. Misato Nishiki produced in Misato Town. Misato of Misato Nishiki is the name of the place. The acidity is strong. It seems to have some similarities with Shinmasa, and I wonder if they are influenced by each other as they are part of the NEXT5. As the back label says, it is best as a food sake. The photo shows two kinds of tuna. The red meat has a refreshing acidity that is typical of this time of year. The chutoro zuke (medium fatty tuna), on the other hand, has a rich fat that is not typical of this time of year. This may be the first time I have had zuke marinated in fence at Matsuura's.

Bimonthly Sushi Matsuura🍣 Fourth Sake of the Day Today's sake is a summer sake series, but a very robust one appeared on ‼️😆 It is a rich sake with sweetness and umami. The aroma is also gorgeous. I was in Nagoya when it was made. I used to drink Kankoume when I was in Nagoya, but this is the first time I've had this type of sake. The photo shows horse mackerel and striped horse mackerel. The horse mackerel was fatty and delicious. I didn't know such a thing was available even in this season. The striped horse mackerel has a refined flavor and fat. It does not mean that horse mackerels are vulgar...^^;.
