Yamadanishiki Roku no brewery in the production area. In the future, it is likely to go up to 12. Incidentally, Rokunosai is brewed with rice grown in the Kikuchi River basin, no pesticides, no fertilizers, a pure yeast yeast yeast, and a wooden vat brewing process. While it has the gasiness and lightness typical of San-do, it kind of has a flavor that is a little different from the previous San-do. Is it my imagination or ❓️🤣 I knew Sundo was good. It's also good that you can still buy it normally.

Otters Pairing Dinner" ✨, a collaboration between Asahi Shuzo and Austria A little bit different flavor with 6 string quartets by visiting Vienna Philharmonic players, 6 kinds of Otters, and 6 dishes of Viennese cuisine. The Austrian Ambassador to Japan was also in attendance😲. The final pairing was a plum wine, Tchaikovsky and apricot Knudel. This is my first time to Austrian cuisine, but I have no idea what to expect as there were many unfamiliar names! The sake is a luxurious plum wine made with polished 20% and 30%. It is sweet, but with a firm acidity and a clean, crisp taste. It doesn't feel heavy or sticky at all. I loved it😍. It was quite an extraordinary, luxurious and wonderful party ✨✨.

The Austrian Ambassador to Japan was also in attendance😲. The fifth pairing was Otter Blue Type35 again with Dvorak and braised pork cheeks fried in semel powder. Semel powder.... I wonder what kind of powder it is.... This sake is made with Yamada Nishiki, which Asahi Shuzo brought to the U.S. and cultivated in cooperation with American farmers. It is from Arkansas. The water used for brewing is from the Hudson River, making it a 100% American sake! I think today's sake was of a similar strain, except for the first bubbles, but this one seemed to have a slightly unique flavor.

What is strudel ❓️ lol This Otter is made from Yamada Nishiki rice polished at 8%. If it can be made this good, it doesn't need to be called "out of equal rice". I don't understand it at all even if it is called "out of the box rice"!

Symphony Otters is a sake brewed by listening to "Symphony Otters" during brewing, which was created to be listened to in sake. I don't understand the difference anymore! I think even some wines were made to listen to Mozart while aging... ^^;. I wonder if it's possible to really change something by making people listen to music: ❓️🤔

The sake is clear with no cloying taste. Clear sake with no cloying taste. The sweetness is also nice ✨.

The Austrian Ambassador to Japan was also in attendance😲. We started with Otters Sparkling 45, vegetables marinated in Austrian pear vinegar, and Mozart. I haven't had Otters Sparkling in several years, but it was delicious, with the rice flavor and sweetness coming straight from the rice. Gas pressure is low.

Sake from Obuse Winery. The sake rice is Miyamanishiki produced in Nagano Prefecture. The rice is Miyamanishiki from Nagano Prefecture, and the rice polishing ratio is 70%. No, it is an unusual sake brewed with the winery's yeast. It is quite aromatic for a classical yeast. It has sweetness and acidity, and is modern. The impression is a little heavy. I remember the Obuse sake I had before was lighter, so it was a little different from what I expected. It is delicious, though. It is hard to find so I wonder when I can drink it next ❓️🤔

The fifth 🍶 of Sushi Matsuura we visited a while ago. We finished with the "Aki-Agarashi" of Drunken Whale. I like to finish with a dry sake. I'm usually a bit drunk, so I don't like to have a heavy one...^^;. It's dry, but has a good flavor like Aki-Agari, and the saltiness is just right.

The third Sushi Matsuura I visited a while ago 🍶. It's been a while since I've had Black Phoenix, but I wonder if it's a kind of hiyaoroshi (freshly grated sake). ❓️🤔 The impression is quite different from the image I had before. I think the acidity is high and the taste is lighter because of it. Personally, I like this direction. After all, the sake is also up-dated. The Phoenix series includes Gold and White, and Blue Phoenix was recently released. I couldn't help but snap it up because it looks so cool. It's a sparkling wine with secondary fermentation in the bottle in a Champagne bottle. I'm looking forward to drinking it✨ The tuna of the day was from Shiogama. It was so delicious😍.

The second Sushi Matsuura I visited a while ago 🍶. The second one was also hiyaoroshi. It was my first time to try this brand. It is from a brewery in Hiroshima. Sake rice is Hachitan Nishiki from Hiroshima. It is also excellent as a food sake 😃.

The first 🍶 of Sushi Matsuura we visited a while ago. The first hiyaoroshi of the season 🍁. It is the perfect sake for hiyaoroshi. The sashimi was Kue and Kagoshima Akaundan. The akaundan was so delicious😍Karatsu is famous for akaundan, but it was already gone and Kagoshima just barely had some.

The far shore of the year. Visited the grave and had a drink at my parents' house 🍶. The last one is Tasake which I brought with me. The label is not like Tasake. And I don't understand it...^^;. It is a limited edition of IMADEYA. The rice is Akita Sake Komachi. It is gorgeous and sweet. It is delicious, but a little heavy for the third bottle.

The far shore of the year. Visited the grave and had a drink at my parents' house 🍶. The second bottle is a sake from Saku that my brother got as a gift. I don't know this brand at all! The label also looks dull...^^; What is TSURUYA on the label? It is brewed in Nagano and made with 100% Nagano rice. And it's made with Yamae Nishiki, which was developed in Nagano. It's nice to stick to local. It is not very floral, but rather a little dry and refreshing. It was a good match with the snacks. I also had some tasake after this, but this one was probably the best.

Ohigan. Visiting the grave and having a drink at my parents' house 🍶. The poor thing that was forgotten in the fridge after being purchased at the end of last year? Ni-Hare 🐰🐰 shiboritate nama sake that was bought at the end of last year and forgotten in the fridge. LOL! I jokingly opened it and found that it still had some gas in it. Well, it doesn't matter because it's delicious.

I returned from a trip to Hokkaido and drank at home for the evening 🍶. After drinking Kaze no Mori in Hokkaido, I remembered that I had a bottle of it at home and decided to drink it immediately. More than half a year has passed since I bought it.... I wonder if I should have drunk it sooner since it is a draft sake ❓️🤔 And the sake is so delicious that it blows those worries away. It has a good balance of sweetness and sourness. The alcohol content is low and not heavy. The Akitsuho from Uda, Nara is polished to 22% and is clear with no cloying taste. A bit surprisingly good😍.

Summer vacation ☀ Last night was at the famous Sushi Oneda in Hakodate. I drank a lot of things but only took 2 pictures of the labels, so that's all I post. The second one is a rare one from Goryo. It is a sake that is produced in small quantities and not distributed to liquor stores. It was a good way to end the trip with a sake from Hokkaido, and one that is rarely drunk. I don't need to tell you how good it tasted. It has a clear sake quality with no impurities, a gorgeous ginjo aroma, and an elegant sweetness. The rice used for this sake is Ginpu.

Summer vacation ☀ Last night was at the famous Sushi Oneda in Hakodate. I drank a lot of different drinks but only took pictures of the labels of two of them, so that's all I'll post. The first one is Kaze no Mori from Nara. I like this type of sweet and sour, which is typical of Kaze no Mori ♥ I think it has more gas when opened, but this one was calm. This one is good. Sushi was 3 kinds of tuna. The tuna was over 150 kilograms and from Atsukishi. I had never heard of it, so I was surprised to hear about it, but I was told that it was an anomaly. He told me that it used to be impossible to catch tuna in Atsugishi. It had been a long time since I was in Hokkaido, but I often heard this kind of story at sushi restaurants. Not only tuna from Atsukishi, but also bonito, salmon, sea urchin, tuna from Tsugaru Strait, etc... When I visited Hokkaido 7 or 8 years ago, I heard the same story about amberjack being caught in Hokkaido. The ecosystem is changing rapidly...

Summer Vacation ☀ 8th at Otaru's famous restaurant Nigirigunraisen I drank Jishin Asahi at the 7th one but I skipped it because I drank it the day before and I have no more sushi to put on the post ‼️🤣. Back to Back to Back sake from Mie. When I told the owner that there were a lot of Mie sake, he said that he gets it from a liquor store in Mie. Why in Hokkaido? Well, Kido is in Wakayama, so it's close. I don't remember what it tasted like when I drank this much! I am sure it was delicious🤣.
