Jikin's Aizan. It has been in the fridge for a year because I couldn't open it! 🤣 As expected...so I uncorked it. I like Jikin because it is not so sweet and not too heavy. It has a good balance. Now we only have one bottle of Omachi in our stock of Jikin. This one has only been in the fridge for about 6 months yet. ‼️ lol I don't think I can buy any more 😭

The fifth at Sushi Matsuura. This is the last one. Asahi Ei of Tochigi. I have never heard of this brand before. I have been to Tochigi dozens of times, but I had never heard of it...^^;. It is an autumn sake with a somewhat calm impression. It doesn't say hiyaoroshi, but it was made in March and shipped now, so is it hiyaoroshi? 🤔 I wonder if it's still fresh?

The fourth at Sushi Matsuura. Omine in Yamaguchi. Fruity and a bit sweet but still delicious 🎵. The number of grains of rice seems to indicate the milling ratio, but I wonder what the white and black colors represent🤔.

The third at Sushi Matsuura. Shichihon-yari in Shiga. Not too sweet, not too spicy. Not too sweet, not too spicy, just right to drink with a meal. The label is also very nice.

The second one at Sushi Matsuura. Mimuro cedar dewy leaf style. It is a low-alcohol sake at 13 degrees Celsius in its original state. It is light and easy to drink, just like Mimuro Cedar.

The first at Sushi Matsuura. FOUR SEASONS Autumn hiyaoroshi from Hiraizumi. It has a strong acidity, which is my favorite type. Incidentally, the back label says the acidity is 1.8, but I am not sure if this is high or low numerically 🤣.

"Do you have any unfinished business from the summer?" Hmmm, I wonder if there is anything... 🤔 Originally, I never decided to do this in the summer! I never decided to do that... ^^;. and I couldn't answer the question posed by the back label...or is the answer that there is none? But I guess it means that I have no particular goal and am spending my time idly without anything to do...^^; I reflect on that... Acidity and restrained sweetness. Low alcohol content of 13 degrees. Easy to drink and Swiss. A good sake, typical of Sentori. This is the fourth SENKOKU sake in a row for drinking at home! Kuwagata, Kabutomushi, Golden Kabutomushi, and Sparkler I think I am biased, but I like it so I can't help it.

Kabutomushi was untimely due to the completely cooler weather. This is the third consecutive Sengkou bottle for drinking at home. Kuwagata -> Kabutomushi -> Golden Kabutomushi This is a collaboration sake with Imadeya and is the same as last year. It is a light summer sake at 13 ° C. It has a little bit of umami and a milky flavor that is typical of Ligori. It has a little bit of umami like a lactobacillus drink and a little bit of lactobacillus-like nuance. Delicious again this year.

The weather has cooled down completely and the time is not right for Kabutomushi...^^;. It is light like a summer sake. Delicious again this year 😃 I was surprised that the alcohol is 14 degrees. I thought it would be lower. The Akinatai fish seems to be undercooked, but it is cooked properly! But still, summer sake and akitogi...a little different atmosphere? And the golden kabuto is still around too 🤣.

Early autumn trip to Yamagata. Auberge of wild vegetable dishes? At Dewaya, we were served Sakata's Tatenogawa. Tatenogawa is a sake brewery specializing in junmai daiginjo, and although I had an image of it being fruity, it is also dry. It is not too dry because of the aroma and umami flavor, just the right amount of saltiness. Perfect for a mid-meal drink 🎵. The photo is of a sweet potato stew and ayu fish! 🤣 The new rice cooked in a rice cooker served at breakfast was shiny, glossy, and delicious. The aroma was wonderful. Freshly cooked silver rice is the best ✨✨.

SENKYO O O UNITED ARROWS collaboration sake 🍶. This year's Iwagata is a nigori (cloudy) sparkling 🍾. The back label states "carbon dioxide" in the ingredients section. Does this mean that the sake was not fermented in the bottle but injected with carbon dioxide gas? Well, as long as it's good, I don't care about the production method. The gas pressure is lower than expected. If it claims to be a bubbly sake, it might be better if it is more shwashy. It is light like Sentori, but it is quite cloudy and has a good flavor. Sentori is still delicious. ♥️ I still have a Kabutushi and a Golden Kabutushi in the fridge. I have to drink them soon or summer will be over! 🤣

Sushi Matsuura🍣 There were six in total, but I only post the ones I've never met before. The sixth and last one is Kuririn from Akita. This sake is made with Misato Nishiki from the Rokugo Higashine area of Misato Town. The label on the back of the bottle says to compare the two. I bet you wouldn't be able to tell the difference even if you drank it 🤣.

Sushi Matsuura🍣 There were six in total, but I only post the ones I've never met before. The fifth one is Senkou Senkohana (sparkler). I'm a Sentori lover, but this is the first one I've ever had. But I bought this one... I would have preferred something else since it was lying in the fridge at home... ^^; However, since I ordered the sake as an optional extra, I took it without any hesitation. It tastes like Sentori and I'm looking forward to opening it at home✨✨.

Sushi Matsuura🍣 There were six in total, but I only post the ones I've never met before. The fourth one, following Amber, is Gokeijo. I had never heard of this brand before. It was also the first time for me to taste Hitanishiki sake rice. The aroma is gorgeous, and the rice is delicious and sweet. In contrast to the lightness of Amber. The tuna was Canadian red meat and Shiogama toro. The toro was frozen in season. It is amazing to see the progress of technology. I didn't realize that you can enjoy delicious tuna even in summer.

Sushi Matsuura🍣 There were six in total, but I only post the ones I've never met before. The third one, following Gagakuyo, was Akabu no Amber. I didn't know there was such a thing... ^^;. This year, the autumn swordfish is good for the first time in a long time. It is indeed meaty, fatty, and delicious😍 The new squid season is here 🎵.

Sushi Matsuura🍣 There were six in total, but I only post the ones I've never met before. The first one was Sado Yamada-Nishiki Ninonozo, followed by Sado's Garakudai Zuika. It is a good food sake that enhances the food without interfering with the food. We had the new salmon roe ✨ The skin was thin and it bounced in your mouth without chewing 😍 I love salmon roe. I couldn't help but have another serving 😆.

I hadn't drank the Summer Higuma yet, even though the Autumn Higuma was about to be released! So I had the one that had been sitting in the fridge. It is a light summer sake with a restrained sweetness. An ideal food sake. It is perfect for a hot day when it is well chilled. It's quite a tasty summer hikuma. I've ordered the Autumn Higuma and am looking forward to it ✨.

Hozumoroku Nozomu Brewery. The gassiness seems mild for San-do. Still, it has a firm petitiveness, though. Roku-no-brewed with rice grown in the Kikuchi River basin, sake brewed in a wooden vat, with no pesticides, no fertilizers, and no added yeast. On the label is the character "Riku," which stands for Roku-no-brewing. What kind of regulation will be added if there will be a Nananouzou 🤔.

On a recent trip to Niigata, I visited the famous Niigata restaurant "Brothers Sushi. The restaurant is particular about Niigata sake, and when I asked for sake, I was served only Niigata sake. The fourth and last one is Abe in Kashiwazaki City. Summer sake is available from No. 1 to No. 3, but what was this one? It's written on the back of the tag hanging on the neck...^^;. You bought the No. 2 brewing tank, didn't you? Well, I don't think I would be able to tell the difference in taste no matter what number it was! 🤣 Low alcohol and high acidity, like a summer sake, yet with a good umami. Quite delicious. It is indeed a national abe.

On a recent trip to Niigata, I visited the famous Niigata restaurant "Brothers Sushi. The restaurant is particular about Niigata sake, and when I asked for sake, I was served only Niigata sake. The third was Musho. The third was Mousou, a sake brewery in Murakami City. I had never heard of this brewery. I also heard about a sake rice called "Koshitanrei" for the first time. It seems to be a sake rice developed in Niigata. If you are going to drink in Niigata, it would be nice to have something like this 🎵.
