Just a few of the drinks from last week's trip to Toyama that I have not posted here.... Raijin Kijin Hagiwara is the second one. Ariiso Akebono from Himi. This is a label I have never seen before. This sake is made from Shunyo from Himi and Yuyamanishiki from Toyama. It has a gorgeous aroma, as if it were a jun-dai.

Just a few of the drinks from last week's trip to Toyama that I have not posted here.... Following the yellow one we had at Sushi Daimon, we had a green one at Raijin Kijin Hagiwara. This one is Miyamanishiki. It is a refreshing and easy-drinking sake that is ideal for a meal. It is a perfect food sake with a refreshing taste. The HONAMI series is really good.

Just a few of the drinks from last week's trip to Toyama that I have not posted here.... L'evo, tucked away deep in the mountains of Toga Village, was the only sake that came up for pairing 🍶. A sake with a touch of nigori. The alcohol content was a whopping 19 degrees! But I don't think I felt that much alcohol. Nigori is easy to drink.

Just a few of the drinks from last week's trip to Toyama that I have not posted here.... Uozu sake at the famous Sushi Daimon restaurant in Uozu. A relatively new brand from the Uozu Sake Brewery, Honami's Akita Sake Komachi. It is named Yellow. Every Honami sake is delicious. It is also easy to pair with a meal. Toyama in spring is the second of these ✨✨.

The one I had a while ago. The last of the sake I had at Matsuura's that day. The real rusbos? LOL! I haven't had a Jyushiyo in a long time. It's not easy to get it, and I don't order it even if I see it at a store.... I used to jump up and down when I saw Jyushiyo.... I always leave the sake to Matsutura's, so I ended up having it, and I have to say, Jyushiyo is delicious. It's a little lighter than before, isn't it?

Here's one I had a while ago. Hitanishiki rice produced in Ibaraki Prefecture is polished to 55%. The alcohol content is 15%. It is dry and refreshing, but has umami flavor. Very food-friendly sake. This one is good.

The one I had a while ago. I had no idea about this brand. Aizan rice from Hyogo Prefecture is polished to 45%. The alcohol content is 15 degrees. Not flashy, but a good sake. I must remember it.

The one I had a while ago. It is a new sake from Mimuro Sugi. It is made from Nara Prefecture's Nanadoro sake rice, which I had never heard of before, with Bodai yeast. The alcohol content is low at 13 degrees Celsius in the original bottle. There is no mention of the rice polishing ratio, and no specific name is given. It has the sweetness and acidity typical of Mimuro-sugi. It is very nice.

This is a new or rather five year old sake from Senkori x UA. It is a sparkling sake with secondary fermentation in the bottle. I was curious to know what an old sake with bubbles of sake would be like. I was curious to find out. I love all Senkou x UA. I love all SENKOKU x UA, but the unique flavor and the slight bitterness that lingers in the aftertaste is a bit.... I guess my expectations were too high. ❓️ It's just my personal opinion....

Kame-san, which I accidentally left in the fridge...^^; I drank the same one at a sushi restaurant when it was first released, but the impression is very different from what I remember from that time. I think it is too strong for Shinsei. Well, my memory is not so reliable, so I can put it aside, but it doesn't seem to be like Shinsei. It is delicious in its own way, though. I wonder if it was altered in the fridge? 🤔

I recently purchased a bottle of Sanzu's Hozumasu Go Nozou brew and remember. I had bought a bottle a long time ago: ‼️ I went to the fridge and found a bottle of the same Homasu Gononozo in the back.... But this one was a special one, a summer-only one called kawamatsuri. I don't know what the difference is! LOL! I probably should have drank it earlier because it is a fresh sake, and the unique shwashiness of the sanshu might have faded away, but there is no point in saying that now. However, since I noticed it, I decided to drink it as soon as possible. As a result, there was no problem, and the schwash was present. I have no way to confirm if the taste has changed since its release, but I am sure it hasn't changed much? At least at a level that I can't tell. Is it lighter than usual because it is a summer sake? I don't think the strength is the same, but that's the impression I get. The sweetness is also moderate and refreshing. Combined with the strong shwashiness, you can finish it in no time at all. It's like the sansho that is so easy to drink is even easier to drink. It would be a great drink on a hot summer day. It's good even now, though.

The weather is so bad and cold that I don't feel like going outside to watch the cherry blossoms 🌸🍶 so I'm going to drink this at home to get into the Hanami mood 🎵 The pink Nosaku sake cups will make you feel even more excited ⤴️ I'm not sure if it's the weather or not, but I feel like the weather is bad every Saturday and Sunday when the cherry blossoms are at their best in Tokyo... 😱

Tokyo Otter Party 2025✨✨ All you can drink Otters except "Polished and Beyond" ‼️ I drank many kinds of Otters, but there's not enough to list them all, so I'll just mention two that I've never had before. The second one is the flagship of Otters, Niwari Sanbu, but it's not just Niwari Sanbu, it's Nama Shu. An unlikely one. Otters are basically fire-aged, so it's quite rare to have a nama-shu, isn't it?

Tokyo Otter Party 2025✨✨ All you can drink Otters except "Polished and Beyond" ‼️ I drank many kinds of Otters, but there's not enough to list them all, so I'll just mention two that I've never had before. The first one is a low-alcohol Ottersai. It was 11 degrees Celsius. It's easy to drink, but this one is even easier to drink. It is a dangerous drink that you can drink as much as you want 😆. Only one glass of "Shine and Beyond" was offered to each person. I've had it many times before, but this time it just wasn't the same.

I went back to my parents' house on the far shore and visited the grave 🙏. The second bottle was from my parents' house. Sake from Yamagata. I didn't know this brand at all. It is aluzome, but it is not so sharp. The first bottle of Tasake is lighter than the second one, though it has a 15% alcohol content.

I went back to my parents' house to visit the graves on the far shore 🙏 After that, my siblings and I had a sake party 🎵 I brought some Tasake light nigori (rice wine) from home. Not too sweet, not too thick, perfectly balanced. The alcohol is not light, but I can't believe it's 16 degrees. The light nigori flavor adds to the deliciousness! A good sake🙆.

Hina Matsuri 🎎 It's an event that has nothing to do with our family, but we took advantage of it and had rose chirashi 🎵 It's from a sushi restaurant in Mejiro and it's delicious 😍. The sake also has a pink label that looks like that. The sake is also labeled with a pink label that looks like that. I have no idea what has or hasn't changed with aging, but Shinsei always tastes great ✨✨!

After my father's 49th birthday, I returned to my parents' house and had a party with my siblings to thank them for their hard work. Although it is a noble sake, it does not have a sticky sweetness, and the acidity makes it easy to drink. The low alcohol content is also good. It's very relaxing. The three brothers finish a bottle of Yongo and split up! We were tired...^^; Next time we will go to the far shore of Japan.

The other day, drinking at a sushi restaurant, I suddenly realized something. Sansho is named "◯no-zozo" according to the way it is made, but there was no difference on the front label (although there is a difference in color due to the difference in rice used for sake). But recently, they have started to use the name on the front label. I have seen on the official SNS that they are planning to go up to 12 Nozai breweries in the future, and they have prepared 12 leaf-like patterns as well!
