The first one 🍶 at "Raijin Kijin Hagihara" for dinner on the first day 🌸 of the spring food tour in Toyama without using any Hokuriku Ouenwari (tearful). Hayashi's Gohyakumangoku. This is the brand that is always served when you order sake at a restaurant in Toyama. But it is that good. It has a good balance of sweetness, sourness, and umami. I came to the restaurant hungry, but the gentle aroma and salty taste of the sakurayu served at the start of the meal calmed me down. It's so nice and spring-like 🌸.

My sixth favorite sushi restaurant, Matsuura's 🍶. The last one was Mimuro Sake. Sake made with Bodai yeast for the mother sake, and easy to drink with low alcohol content of 13 degrees. Good for the end of the night 🎵.

My fifth favorite sushi restaurant, Matsuura's 🍶. Spring Haze in Akita. So this is a chestnut! As the name suggests, this sake is made with Shinsei yeast Kyokai No. 6. Sakura trout and torigai. Spring sushi items. The torigai has an aroma of the sea and a hint of sweetness. Sakura trout is delicious with elegant fat.

The third 🍶 at my favorite sushi restaurant, Matsuura's. Here comes the most gorgeous one. The sweetness is firm, but just on the edge of not interfering with the meal ❓ It's still delicious.

Second 🍶 at my favorite sushi restaurant, Matsuura's. Aizu Nakasho light nigori. This is another calm sake that goes well with food. The spring-colored label adds a seasonal touch 🆙.

It's Saturday, the day of cherry blossoms, and yet the weather is still dull... 😨 It seems that the weather during the cherry blossom season is quite bad... However, we didn't let the weather stop us from enjoying the cherry blossoms! UA Sakura Fukiyo 🌸🌸, a collaboration sake with UA, is sweet and sour and easy to drink. The degree is 14 degrees, but it feels a little lighter. Pink sake with pink Nosaku's pink sake cups is nice except for the weather 🤣. But why so beautiful pink ❓🤔

昼に食べ過ぎて、夜になっても全くお腹が空かず。がしかし、刺身を買ってあったので1本開けることに。 そんな状態なので、軽めの甘酸系がいいなと思いこちらをチョイス。がしかし、想像と異なり、旨味ののったしっかりタイプ!😂 体調がそう思わせたのかも❓🤔 いずれにしろ、お酒がまったく身体に入ってこず、1/3は明日へ持ち越し…^^;

The second bottle at my parents' house is a maki machine. It is a Takachidai sake brewery, but I didn't know they had such a thing... ^^;. It says flat polished rice✕micro bubble rinsed rice, but I've never heard of micro bubble rinsed rice before. I don't know how difficult it is, but anything tastes good❓🤣. The flavor was more gorgeous than the other two, but the sweetness seemed to appeal to everyone. It has a sweetness and aroma that everyone will like. It is honestly delicious. Takachidai Shuzo is still good.

I went to my parents' house on the far shore of Japan. After visiting my mom's grave, my dad and siblings and I had a good time 🍶 and celebrated my mom's 80th birthday, which would have been yesterday if she were still alive. ㊗️ As the back label says, the sweetness and aroma are modest. It is not at all gorgeous, but this is good! It says it's good warmed, but it's certainly good with some acidity.

The Tasake went empty unexpectedly fast and I opened another bottle 😃 Of course I didn't drink all of it and stopped at about 1/3 of it! Eli‼️ And then I opened the second bottle........ Two wolves in a rabbit's skin.... Interesting label!

A light nigori rice wine. It has a strong umami flavor, but not too sweet or heavy. Slightly effervescent and rather easy to drink. I like it a lot 🎵. So, it was gone in no time and I had to start another bottle...^^;...

Tonight we went to Otsuka to eat anaguma. The wife saw it in a magazine and wanted to go there. 4 at Jizake and more. The last one was also omakase and heated sake. We chose this sake to go with the zosui, which was mild with the egg. It was indeed very gentle. When heated, the aroma, sweetness, and umami spread gently. It's deeply delicious. Long ago, I drank heated sake at a cheap izakaya (Japanese-style bar), and the volatile alcohol of the cheap sake stained my eyes. I regretted it. Heated sake is different in the way it enters the body. The temperature is close to human skin, and it's just so gentle. I was once told that sake is supposed to be drunk warmed. Cold sake was said to be a lazy drink. I had read a story about this and thought I had to try it again, but my first memory of it kept me from trying it.... It's not good not to drink. I should have taken it earlier. After the rice porridge, I had some room in my stomach, so I tried one of their specialties: tuna and sea bream rolled with yellow meat and tuna innards. It was ridiculously delicious!

I would rather eat something else than a badger! LOL! I think it is a good restaurant. It was overbooked and several groups left without getting in. Heated sake is good! I think I'll buy a tin of chirori first....

Tonight we went to Otsuka to eat anaguma. This is the third one at Jizake or More, which the wife had seen in a magazine and wanted to go. We finally decided to try the heated sake to go with the anaguma shabu shabu, which we were looking for. The sake that was recommended for the shabu-shabu was from the same brewery as the Arashigiri sake. The classical label was nice. The taste was also classical, but not so much. The aroma spreads quickly when it is warmed up, and even at a sake strength of +7, it has a sweetness to it. Above all, the umami is like a soup stock. It's warm, so it gently permeates the body. Heating up the sake is great too ✨✨✨. I wanted to compare it with cold sake. I was told to add black pepper to the anakuma to taste, and since there was a lot of actual pepper in the broth, I thought it might be a bit strong, but that was not the case at all. The fat was not melting, but plump. It is delicious, but I guess I expected too much ❓ lol

The sashimi is delicious! The salt-tapered yellowtail, the seared bonito with chives, soy sauce and malted rice, and the tuna were all great 🎵 The rolls that we had to finish off the meal are a must! The rolls I had to finish with are a must!

Tonight we went to Otsuka to eat anaguma. This is the second one at Jizake or Motto, which the wife had seen in a magazine and wanted to go. This one was also cold sake. I don't remember drinking Tottori sake. Maybe it was the first time? I took a sip and was surprised at how punchy it was. I thought it seemed to be high in alcohol, but when I looked at the back label, I saw that it was between 20 and 21 degrees ‼️, which is quite good. However, as I drank more, the unique nigori flavor of rice won out and I didn't mind the alcohol content. The amberjack daikon has a gentle flavor with a hint of sweetness. It is a type I have never had before. The Ezo-shika deer cutlet was rare and tender 🎵.

Tonight we went to Otsuka to eat anaguma. The first one at Jizakeya Motto, which the wife had seen in a magazine and wanted to go. Wataya in Miyagi. They seem to specialize in heated sake, but we started with cold sake. It was drier than I expected. The aroma was subdued and calm. A great sake for a mealtime drink that doesn't interfere with the food. Goes well with sashimi. Since it was my first visit, I chose a course that included Anakuma and other specialties of the restaurant. The three sashimi dishes were tuna (red and medium fatty tuna), seared bonito with chives and soy sauce koji glaze, and grilled amberjack with charcoal salt. All were absurdly delicious and perfect with a side of sake ✨.

It's been a while since I've had a flax cat🐱 low-alcohol sweet and sour. This type of sake has been increasing, but this is the pioneer. And it is a great sake that embodies the diversity of sake. Delicious😍. According to the description on the back label, this lot can withstand aging. I have another bottle, so I'll let it sit in the fridge.

Today is the fun Dolls' Festival 🎶🎎, but I still have 2 bottles from other breweries ‼️🤣... ^^; Well, I hope I can drink them by the end of this year ‼️ And this is Tatenokawa. It's absurdly good. It has the umami and sweetness of rice, but the acidity is strong enough to keep it all together. It is recommended to be served lukewarm, but I can understand why. It was better at room temperature than cold. The entrée was Sushi Asazuma in Mejiro. Unlike the rose chirashi at the end of the year, this dish was made with asari clams, rape blossoms, and lilies as petals to create a spring-like effect.
