Sushi Matsuura🍣 There were six in total, but I only post the ones I've never met before. The fourth one, following Amber, is Gokeijo. I had never heard of this brand before. It was also the first time for me to taste Hitanishiki sake rice. The aroma is gorgeous, and the rice is delicious and sweet. In contrast to the lightness of Amber. The tuna was Canadian red meat and Shiogama toro. The toro was frozen in season. It is amazing to see the progress of technology. I didn't realize that you can enjoy delicious tuna even in summer.

Sushi Matsuura🍣 There were six in total, but I only post the ones I've never met before. The third one, following Gagakuyo, was Akabu no Amber. I didn't know there was such a thing... ^^;. This year, the autumn swordfish is good for the first time in a long time. It is indeed meaty, fatty, and delicious😍 The new squid season is here 🎵.

Sushi Matsuura🍣 There were six in total, but I only post the ones I've never met before. The first one was Sado Yamada-Nishiki Ninonozo, followed by Sado's Garakudai Zuika. It is a good food sake that enhances the food without interfering with the food. We had the new salmon roe ✨ The skin was thin and it bounced in your mouth without chewing 😍 I love salmon roe. I couldn't help but have another serving 😆.

I hadn't drank the Summer Higuma yet, even though the Autumn Higuma was about to be released! So I had the one that had been sitting in the fridge. It is a light summer sake with a restrained sweetness. An ideal food sake. It is perfect for a hot day when it is well chilled. It's quite a tasty summer hikuma. I've ordered the Autumn Higuma and am looking forward to it ✨.

Hozumoroku Nozomu Brewery. The gassiness seems mild for San-do. Still, it has a firm petitiveness, though. Roku-no-brewed with rice grown in the Kikuchi River basin, sake brewed in a wooden vat, with no pesticides, no fertilizers, and no added yeast. On the label is the character "Riku," which stands for Roku-no-brewing. What kind of regulation will be added if there will be a Nananouzou 🤔.

On a recent trip to Niigata, I visited the famous Niigata restaurant "Brothers Sushi. The restaurant is particular about Niigata sake, and when I asked for sake, I was served only Niigata sake. The fourth and last one is Abe in Kashiwazaki City. Summer sake is available from No. 1 to No. 3, but what was this one? It's written on the back of the tag hanging on the neck...^^;. You bought the No. 2 brewing tank, didn't you? Well, I don't think I would be able to tell the difference in taste no matter what number it was! 🤣 Low alcohol and high acidity, like a summer sake, yet with a good umami. Quite delicious. It is indeed a national abe.

On a recent trip to Niigata, I visited the famous Niigata restaurant "Brothers Sushi. The restaurant is particular about Niigata sake, and when I asked for sake, I was served only Niigata sake. The third was Musho. The third was Mousou, a sake brewery in Murakami City. I had never heard of this brewery. I also heard about a sake rice called "Koshitanrei" for the first time. It seems to be a sake rice developed in Niigata. If you are going to drink in Niigata, it would be nice to have something like this 🎵.

On a recent trip to Niigata, I visited the famous Niigata restaurant "Brothers Sushi. The restaurant is particular about Niigata sake, and when I asked for sake, I was served only Niigata sake. The second was Garakudai, a collaboration sake with UNITED ARROWS🍶 UA collaborates with various breweries. And recently they have released Akabu. It is a low-alcohol sake with acidity, which is typical of UA's style. It's a UA collaboration that never fails to deliver. This one is also delicious✨.

On a recent trip to Niigata, I visited the famous Niigata restaurant "Brothers Sushi. As the restaurant is dedicated to Niigata cuisine, I ordered only Niigata sake, which was also on the menu. The first was Kirinzan. The first was Kirinzan, a sake made from Takananishiki rice. When I heard the name Kirinzan, I had an image of it being very classical, but I was surprised at how modern it was. However, there was also a hint of old-fashioned sake in the depths of the bottle. Kirinzan, a brand I would not have chosen for myself, is not bad. It's not good not to drink it.

The second bottle for drinking at my parents' house. Nagurayama from Fukushima. I don't know this brand. Of course, it was my first time, but it was quite good. I guess there are still many unknown good sake brands out there.

The pinnacle of NATURE," it says on the back label. It came out big, didn't it? LOL! It is a kijoshu, but since it is a Senkyoku, I thought it would be light and refreshing, but it was sweeter than I expected. However, it also has a good acidity, so it could just barely be served during a meal. To put it roughly, it's a bit more like a sweeter version of Yonotori. Delicious 😃.

From last week's Sushi Matsuura, I had something I'd never had before: the second was Higashi Kaimori. The second one is Higashi Kaimori, a sake from Futtsu. Sake from Chiba is becoming more and more popular these days. Kangiku is also popular. This sake also has a classical name and character, but it looks modern. It seems to be popular.

From last week's Sushi Matsuura, I would like to introduce some sake that I have never had before. First, Yamashiroya. A brand I had never heard of. It is a sake from Nagaoka. As the concept of this sake is to accompany a meal, the sake itself is not so assertive and complements the meal. But it is also delicious on its own. It is my favorite type of sake these days. I am going to Niigata next month, so I have a lot to look forward to. I'm sure there will be a lot of unknown delicious sake!

Sake I bought in Toyama. My favorite, Hounami from Uozu Sake Brewery. It is a green one made with Miyamanishiki from Akita Prefecture. I think this series of HONAMI is the best food sake to complement any food without being too assertive. I am sure that is the concept of ❓️🤔 It may not be a national brand, but it is a very good sake.

Today, the Rokunoso of Yamadanishiki arrived, so I decided to have the Gonoso that I had in stock. It always tastes like it's from the land of production...no matter what time of year you drink it. Delicious ♥️

I've never seen Houou Mida's label.FLY HIGH 2nd means there was also a 1st. I had no idea... ^^; It is quite effervescent and shwashy. I have an image that Hououmida is generally sweet, but this one is restrained. Very good as a food sake 🍶 I liked it 🎵.

Junmai Ginjo by Tobiroki. It has been a long time since I have tasted Tobiroki itself. It has a moderate sweetness that is well controlled, and the smooth drinking makes the 16% alcohol content seem almost imperceptible, making it easy to drink. It's a quintessential taste. It's a pity that it's almost impossible to find! I'll be back soon 😢.
