I had no idea about this brand. Aizan rice from Hyogo Prefecture is polished to 45%. The alcohol content is 15 degrees.
Not flashy, but a good sake. I must remember it.

It is a new sake from Mimuro Sugi. It is made from Nara Prefecture's Nanadoro sake rice, which I had never heard of before, with Bodai yeast. The alcohol content is low at 13 degrees Celsius in the original bottle. There is no mention of the rice polishing ratio, and no specific name is given.
It has the sweetness and acidity typical of Mimuro-sugi. It is very nice.
This is a new or rather five year old sake from Senkori x UA. It is a sparkling sake with secondary fermentation in the bottle. I was curious to know what an old sake with bubbles of sake would be like. I was curious to find out.
I love all Senkou x UA. I love all SENKOKU x UA, but the unique flavor and the slight bitterness that lingers in the aftertaste is a bit.... I guess my expectations were too high. ❓️ It's just my personal opinion....
Kame-san, which I accidentally left in the fridge...^^; I drank the same one at a sushi restaurant when it was first released, but the impression is very different from what I remember from that time. I think it is too strong for Shinsei.

I went to the fridge and found a bottle of the same Homasu Gononozo in the back.... But this one was a special one, a summer-only one called kawamatsuri. I don't know what the difference is! LOL!
I probably should have drank it earlier because it is a fresh sake, and the unique shwashiness of the sanshu might have faded away, but there is no point in saying that now. However, since I noticed it, I decided to drink it as soon as possible.
As a result, there was no problem, and the schwash was present. I have no way to confirm if the taste has changed since its release, but I am sure it hasn't changed much? At least at a level that I can't tell.
Is it lighter than usual because it is a summer sake? I don't think the strength is the same, but that's the impression I get. The sweetness is also moderate and refreshing. Combined with the strong shwashiness, you can finish it in no time at all. It's like the sansho that is so easy to drink is even easier to drink. It would be a great drink on a hot summer day. It's good even now, though.

The second one is the flagship of Otters, Niwari Sanbu, but it's not just Niwari Sanbu, it's Nama Shu. An unlikely one. Otters are basically fire-aged, so it's quite rare to have a nama-shu, isn't it?

Not too sweet, not too thick, perfectly balanced. The alcohol is not light, but I can't believe it's 16 degrees. The light nigori flavor adds to the deliciousness! A good sake🙆.

It is a very well-made sake. It has a good balance of umami and sweetness. And it finishes surprisingly clean and crisp. One of the best Tasake I've ever had 🎵.
