Room temperature: The aroma is subtle and the taste is pleasant, with a light and gentle sweetness that spreads like water. Although it is a regular sake, it has no peculiarities and is very easy to drink. Chilled: The dryness becomes stronger. Warmed: Sourness, sweetness and umami become stronger, but it is easy to drink. The POP label says it is a "very tasty cheap sake known only to those in the know," and it is true that it is not often seen, and the taste is very agreeable.

Chilled, room temperature: The aroma is wonderful and surpasses that of an ordinary daiginjo. Fresh, sweet, apple-like aroma reminiscent of Otters. On the rocks: Overall mild, especially the bitterness is gone and the sweetness is stronger. Later on, the fullness of flavor is lost. It is considered the best of the Kikumasagin series, with a stronger flavor and bitterness in comparison, as well as 30% more ethyl caproate, the substance from which the aroma is derived. It is priced at less than 900 yen for a 900 ml bottle, and is packaged in paper cartons and printed with rice ink, making it easy to handle and eco-friendly. Cold: Apple-like aroma, sweetness without alcohol, then disappears like cotton candy. A sake that is satisfying on its own. There is no doubt that it is tasty and easy to drink, but when you get to this point, you come to a sense of what sake is all about. It is so delicate that even when stored in the refrigerator, it developed a bitter taste after a few days. This is my first Ottersai. I heard that the new product is made with health concerns in mind, but I didn't know the details. If you buy it, it costs more than 5,000 yen at least, so I received it as a tax return gift from my hometown of 29,000 yen (less than 2,000 yen in real terms). (The actual cost is less than 2,000 yen.)

Cold: Not much aroma, but refreshing acidity and a hint of sweetness, followed by bitterness and rice flavor. It is best served with food rather than on its own. Heating: (According to the label, it is best served lukewarm.) Aromatic, mild and rich flavor. Apparently relatively hard to find in Shizuoka Prefecture, but Hamamatsu City's Sake-no Sato had a lot of Hokuriku sake!
