Izumo region limited edition sake brewed with local rice grown with less pesticides and scientific fertilizers.
A well-balanced classic food sake, it was delicious.
Visit to a brewery
We went to Tosa Kura, which brews mainly high-end products.
Paid tastings are available in nine different varieties, and drivers can also enjoy soft-serve ice cream and frozen treats.

This sake is a blend of Daiginjyo and Ginjo blame portions.
This year, the percentage of Hachitan-Nishiki is higher than Yamada-Nishiki, and there is no Oumachi in the blend.
It is definitely better than last year, and the alcohydrate level is 1% lower, making it easier to drink.

My wife bought this for me when she went to Tokyo for a visit.
A collaboration between a liquor store started by a former idol (NMB48) and Abe Sake Brewery, it was a delicious sake, sweet and sour, with a lingering taste like drinking a Ramune.

Today's first brewery was Kamoizumi Jungin.
The seven Saijo breweries have a similar spread of umami, and it was easy to tell that this was from Saijo.
Store for it
Akaban Omachi✖️ seems to be a very limited edition sake made from Hyogo Prefecture Yamadanishiki, but it's been uploaded quite a bit.
The concept is to send ale on a sunny day, so it was fresh, sweet-tasting, and easy to drink.

The brand name is French, which is used by winemakers, and when combined with the product name, the Japanese reading is "Soga Family Generation 100 Years Ago.
The fact that it is made by mixing and fermenting two old yeast strains in the "nama-hashiroshi" style gives a sense of 100 years of time.
The easy-drinking version is Numerosis, which I drank before, but it is more like sake, full of flavor, and also delicious (although both are sake).

I bought it because I wasn't looking for anything in particular.
It is well-balanced and can be warmed up, but I think it tastes better lukewarm.
At Izakaya
This time, the brewer stocked a bottle of Jikin, a raw Hachitan-Nishiki.
It is easy to drink, yet full of flavor, and is well made as a food sake.

The liquor store informed us to reserve a bottle, and being caught by the limited edition, we did so again this year.
Slightly sparkling sweet and sour, it was popping every time I opened it.
At Izakaya
Today's first was Brahma, and I asked the owner to choose the last one.
I had no doubt that it would be a higher spec than the brand I drank, and it was rich and tasty.
Purchased at the store
Even though the liquor store announced the arrival information in the morning, it was sold out by regular time. The fourth arrival information was in the afternoon, so I was able to get it.
It was delicious and tasted similar to Shinmasa, a Japanese sake brewed by a winemaker in the off-season. 💮
