It is a compliant rice (a sibling variety crossed with a close relative of Yamada-Nishiki) registered as a variety by a major brewer, Hakutsuru,
It is like Jyushiyo's Sake Mirai, and it seems to be supplied by Hakutsuru to breweries that can brew it well.

A well-balanced classic food sake, it was delicious.

We went to Tosa Kura, which brews mainly high-end products.
Paid tastings are available in nine different varieties, and drivers can also enjoy soft-serve ice cream and frozen treats.

This sake is a blend of Daiginjyo and Ginjo blame portions.
This year, the percentage of Hachitan-Nishiki is higher than Yamada-Nishiki, and there is no Oumachi in the blend.
It is definitely better than last year, and the alcohydrate level is 1% lower, making it easier to drink.

My wife bought this for me when she went to Tokyo for a visit.
A collaboration between a liquor store started by a former idol (NMB48) and Abe Sake Brewery, it was a delicious sake, sweet and sour, with a lingering taste like drinking a Ramune.

Today's first brewery was Kamoizumi Jungin.
The seven Saijo breweries have a similar spread of umami, and it was easy to tell that this was from Saijo.
Store for it
Akaban Omachi✖️ seems to be a very limited edition sake made from Hyogo Prefecture Yamadanishiki, but it's been uploaded quite a bit.
The concept is to send ale on a sunny day, so it was fresh, sweet-tasting, and easy to drink.
