I've let it sit in the fridge for a long time in the old design bottle. This is the first time I've tasted the R-type in the middle. The aroma is mild. In the mouth, there's a tingling sensation, and the sweetness of pear and muscat juice spreads in the mouth. Slight bitterness and sourness, and the taste of kombu dashi from the sake brewing process is clear in the distance. The finish is slightly bitter and mineral. Great quality, elegant bottle, great!

When you pour it into the cup, the aroma of green apples fluffs in your mouth. In the mouth, the sweetness and slight sourness of green apple juice is mixed with the fresh texture and spreads with a slightly bitter taste. It has a slightly fizzy taste. The finish is crisp and spicy, like a dry junmai, with a slight bitterness that disappears quickly. It was a very well-blended bottle! I think it's very cost effective.

This is the first bottle brewed by Kamikawa Taisetsu Brewery in the Hekun cellar at Obihiro University of Agriculture and Veterinary Medicine. As a fan of Kamikawa Daisetsuke, it is hard to resist. The aroma is mildly pear-like. In the mouth, the sweetness and deliciousness of the rice spreads in a fresh texture. As the temperature rises, the aroma of Muscat leaves the nose. After that, a little bitterness follows, and it smoothly disappears afterwards. The temperature returns to a more comfortable level. The Kamikawa Taisetsu is delicious after all! I look forward to seeing more of them in the future.

The aroma is almost absent, perhaps because it's 70% polished. On the palate, the sweet and savory flavors of the rice are soft and smooth on the tongue, and they are spread out softly and discreetly. It has just the right amount of acidity and is well balanced with the sweetness and flavor. The slight bitterness smoothly follows and is accompanied by a spiciness that disappears nicely. Overall, it is mildly assertive and well-balanced.

Mitsuo, you're in India this time! It's mecha soft. LOL The aroma is mildly green apple-y, with some strawberry notes in the distance. In the mouth, it's lush on the tongue, with a light strawberry-like sweetness. There is also a slight sourness and bitterness, and a refreshing impression spreads. The aftertaste is crisp and dry with a slight bitterness mixed in, and has a short aftertaste. It was a great bottle to chill in the hot summer!

It is the only sake in Satsuma. We have been looking for this sake for some time in order to conquer the whole country, and now the time has come to drink it. The color is candy-colored and the aroma is softly caramel and sweet sake. In the mouth, the sweetness of the fluffy rice and the kelp broth mixes with the flavor. The spiciness also follows and is very sharp. In the middle, you can feel the freshness. The aftertaste is short, with almost no acidity or bitterness. I thought this was a good idea, so I tried it warmed up, which also increased the flavor and sharpness, and it was quite good.

In the mouth, the sweetness and sourness of the white grapes go down smoothly while the slight fizziness stimulates the tongue. Slightly bitterness also follows. The aftertaste is refreshing, with a faint bitterness and a mineral feel to it that fades away. It was a well-balanced beautiful sake that you can drink without getting tired of it! Kuheiji, I'm always happy to buy this much.

The sweetness and acidity of green apples follow and spread. The finish is short, with a sharpness and a slight bitterness that is typical of five-hundred-million-dollar sake, and then fades away quickly. I had the impression that this is a smooth, easy-to-swallow foodie drink that goes well with both meat and fish.

The texture is supple on the tongue and there is almost no acidity or bitterness. However, it is not all light and smooth, but rather it gives the impression of a light and deep flavor. A little crispness on the finish gives a pleasant finish. It is a well-balanced mid-meal drink. It went great with the bonito sashimi!

In the middle part of the bottle, a grapefruit-like sourness and bitterness appear, and the texture is slightly slippery. The bitterness remains on the finish, but it is crisp and clean as an unpasteurized sake. This is a far cry from the recent fruity line, with a hardcore side and a softness that comes out from time to time. Ta!

A flower sun bath after a long absence. Last time it was Hachitan Nishiki and this time it is Misan Nishiki. The aroma of pineapple drifts in the air as the yellow label suggests. When you take it in your mouth, the sweetness and sourness of the pineapple juice spreads in your mouth. However, it has a rather smooth impression rather than a rich one. The aftertaste is not too sticky and the pineapple juice disappears quickly and clearly. It's a fruity, clean drink, one that you can easily drink without a snack!

The second bottle of sake to celebrate the birth of my eldest daughter is Shinsei. The aroma of muscat and melon is wafting through the air. In the mouth, the tingling sensation is combined with the flavor of rice and sweetness like a melon, and it spreads softly. A slight spiciness and refreshing sweetness lingers on the tongue, with a mineral feel in the distance. This time I had sushi as a side dish, and it went very well together, I was going to split it up into two days, but it was delicious! I emptied it in one day ^_^; I hope I can buy another zodiac bottle next year.

Sake submissions, again! This time, we're dedicating a bottle of sake to our eldest daughter, the New Year's sake, engraved with the Chinese zodiac sign of the year! The aroma of apples drifts softly through the air. In the mouth, there is a pleasant stimulation with a tingling sensation as you would expect from unfiltered, unpasteurized sake. The sweetness of the wine spreads as if it were smooth. The apple-like aroma that goes through the nose is pleasant and the aftertaste is refreshing. But there is also a slight bitterness and a crispness that is typical of an unpasteurized sake. That's why you can't stop drinking the next one. The New Year bottle is delicious every year. This year's was even tastier, with all kinds of thoughts on it!

楽しみにしていたimpressionシリーズMタイプ。いざ、開栓!香りはふんわりマスカット系。口に含むと、まず火入れらしからぬ微発泡感。そこに白ブドウの甘さと軽やかな酸味が微かに絡み、フワッと拡がってゆく。そこに無濾過直汲らしい、濃い目の甘旨味が微かな苦味を交えて舌に残る。余韻は原酒らしいキレの中にミネラル感をさらっと感じ、最後にクリアな印象。醸造技術の素晴らしさが圧巻です。とても好みで惚れ惚れした一本でした!

近所の酒屋さんにて購入!近年試飲会を積極的にやってくれたり、ラインナップが進化している素晴らしいお店なんです。さぁ、初めまして栄光冨士。しかも気になっていた愛山!上立ち香は、ほんのり苺と柑橘系の香りが混じる。口に含むと苺果汁のような甘さに、柑橘系の酸味がのっている。そこに胡椒のスパイシーさが追従し、舌の上をキリッと長めに刺激してくる。甘さとスパイシーさが交わる複雑さが何とも言えない心地よさ。この印象とは裏腹に、余韻は短く、ミネラル感を感じながらスッと消えてゆく。メリハリがついているから、クイクイ進んでしまう。他の栄光冨士のラインナップも追いかけてみたくなりました!

結ゆいの10周年記念限定酒だそうで、茨城県民としては買わない理由がなく購入!結ゆいを呑むのは初めて。笑 ポンっと開栓し、香りは穏やか。猪口はオリが絡んでうっすら白濁。口に含むとピリリとした刺激にとろみを纏いながら、甘みと米の旨味が良くのっている。鼻に抜ける米の香りが心地よく、やや酸味を伴った原酒らしいキレが口に長めに残り、やや苦味で締めくくる。やや濃い目でパンチがあり、酒飲みには最高の一本だと思います!

春らしいオシャレなラベルに惹かれて購入。香りはふんわり白ぶどう。口の中ではピリシュワ感が舌を刺激、そこに優しい白ぶどうのような甘さがサラッと、フレッシュな酸味と微かな苦味を伴って主張してくる。そして余韻で乳酸具合が心地よく残る。典型的な山廃のイメージとは違った、私的には初めて遭遇した山廃のスタイルといった印象。後味はとてもドライでスイスイ進んじゃいます。春らしい、出来れば桜を眺めながら昼間から飲んじゃいたい美味しさでメチャ好みのタイプでした!

旦は昨年に山廃純米を飲んで美味しかった覚えがあり、購入。今回は速醸造りの純米吟醸ですかね。立ち香は純米吟醸らしく、華やかな吟醸香が漂います。口に含むとややとろみを感じる舌触り。メロンの果汁のような甘さが拡がり、鼻にメロンの香りが抜けてゆく。その余韻は短く、スッとした辛さと微かな苦味が追従し、淡麗さを醸し出してくる。後味はクリアな印象。色んな食事に合わせる事ができる素敵な食中酒だと思います。すぐ四合瓶空いてしまった…

光男さんも2020突入ですね!しかし、中国へ行ってるということで…コロナに感染せず無事である事を祈ります。今回は楯の川さんが醸す純米大吟醸生酒ですね。香りは極めて穏やかで、猪口にはきめ細かな気泡がプチプチと。口に含むと生酒らしくプチピリ感が心地よく、雑味ない甘さに苦味が追従。含んで間もなくは芳醇さを感じる、けれどすぐに透明感が拡がる不思議な感じです。この透明感にキリッとした辛さと微かにミネラルさを感じて消えてゆく。メリハリ感がよく現れている一本ですね。スイスイ進んじゃいます。
