The aroma is extremely mild. In the mouth, the tingling sensation, typical of unpasteurized sake, stimulates the tongue, and the sweetness and flavor of the rice is assertive. In the middle part of the bottle, a grapefruit-like sourness and bitterness appear, and the texture is slightly slippery. The bitterness remains on the finish, but it is crisp and clean as an unpasteurized sake. This is a far cry from the recent fruity line, with a hardcore side and a softness that comes out from time to time. Ta!
