A local sake from Yamaguchi Prefecture! I drank it outside and it is very tasty with a fruity flavor that spreads on the palate along with the aroma. It is a product that is not often seen in retail stores.
The first attack in both aroma and taste is the aroma of wooden vats 🌲 The mouthfeel is gentle and the aftertaste is clean. The natural yeast from the brewery is very precious.
Finally, a summer sake! The aroma is fresh and invigorating, reminiscent of watermelon, the mouthfeel is gentle but gassy, and the aftertaste is clean and delicious with a sweetness and light acidity like that of ramune (^^).
This is the first Matsumoto after the toji was changed. Shipped after one year of aging from production. When opened, it pops & bubbles in the glass. The aroma is the same as before 😮 The aroma in the mouth is stronger than before. Delicious, but the balance may have changed as a food sake.
This is the first Houou Mita in a long time, brewed with Gohyakumangoku harvested from nearby rice fields. The aroma is mellow and fresh, with a melon-like aroma typical of Mita, and the mouth is filled with a hint of fragrance. It also lingers in the mouth. I never thought I would get this much out of Gohyakumangoku. Omega
The aroma is nice and clean, like muscat. You can feel the gaseous sensation that only a fresh wine can give you, but it is not too harsh in the mouth and goes in easily. This is good! (^^)
(^^) However, from the second day, the sweetness and flavor increases, and it may be a bit tart.
But it is delicious.

Is it cultivated in-house with yeast No. 6 from Niimasa? The aroma is clean, with a hint of rice and a muscat-like aroma. The taste is sweet and delicious, but not too strong.

The spread of aroma changes with temperature, but there is a limit. If it is heated, the aroma will expand, but that is not the right answer, for better or worse. I'm looking forward to finding the right temperature for both taste and aroma!
