When the bottle is opened, there is a gas escaping sound. There is almost no top notes. When you drink it, it has a gentle sweetness, acidity, and a slight carbonation. A pleasant bitterness comes in slowly and quickly. Fresh and juicy. This is delicious. It is easy to drink. I finished the first sake in no time at all. The aroma has a hint of akabu. It is really delicious when well chilled. It is like a light white wine with a slight carbonation. It is delicious both with food and on its own. It goes well with homemade curry. Does it go well with spicy food? On the other hand, it didn't go well with whole bananas, so maybe it doesn't go well with sweet things? Similar to Yamasan? Particularly my favorite. The top aroma is like sweet honey and sugar. When you drink it, it is sweet, piquant, and bitter, and it finishes gradually. There is also a slight carbonation. The taste is rather bitter, but the sweetness is also strong, so it does not bother me that much. However, the sweetness is also quite strong, so it does not bother me that much. The aroma is weak and fruity. It goes very well with Kawanakajima white peach jelly. It is better with food than on its own. Genmai goes well with sweet foods. You can drink it smoothly. My favorite! The top aroma is fruity with a ginjo aroma. When you drink it, the taste is a balance of sweet, spicy, and bitter, with a great sharpness. It is quickly consumed. It has an image of being drier than expected, with a slight alcohol taste. It has a classic atmosphere and a different aspect from other Genmai wines. There is no carbonation or acidity. It is delicious in its own way. It is very good as a food sake. The aroma is fruity, similar to a topping aroma. It goes well with pepper chicken, cabbage salad with ponzu sauce, and boiled spinach. It is delicious on its own, but I prefer it with food. I should have opened the bottle earlier since it was shipped in August, but the person who taught me how to make sake told me that it is better to drink sake immediately. I will try to keep that in mind. Miyamanishiki Polishing ratio 49% 50%. Yamadanishiki Polishing ratio 35% 50%. Alcohol 17%.

Be careful opening the bottle, I struggled with it for about 5 minutes. The carbonation was amazing. The top aroma is that of nigori junmai. When you drink it, the carbonation, sweetness, acidity, and bitterness spread in good balance. Delicious. It is similar to Nakanori's Awaiyoba and Beaumichel. The sweetness is mild, and the color is good on its own and in the middle. The fragrance has the flavor of sweet nigori sake. It tastes completely different from Kawanakajima nigori sake. It is almost like champagne. It goes well with Kuchifukudo's sesame and zunda o-hagi. My favorite! Miyamanishiki Polishing ratio 59 12% alcohol by volume

The initial aroma is sweet and fruity. When you drink it, the sweetness spreads out and the pleasant bitterness comes in gradually at the end, and then it finishes quickly. The balance of sweet and bitter is very good. This is delicious. There is also a slight sourness. It is good both during a meal and on its own. Although it is a bit heavy at 16%, it feels light. You can feel the sweetness and umami of the rice. It is very easy to drink and you can drink it without hesitation. The aroma is strong and fruity. It has an image of sweetness and richness. Is it like a ripe melon? It goes well with stewed udon noodles and dumplings. Is it similar to Genmai's special junmai Yamadanishiki? A particular favorite. The bitterness is pleasant and weak, and it goes down smoothly. This is delicious. The aroma is also mildly fruity. It has an image of white wine. It is well-balanced and a little heavy, but it is light at 13°C and can be drunk smoothly. I would like to try the other fire-brewed Kuroemon, which is a traditional sake made from the same yeast. It goes well with pork miso soup and seafood rice bowl. It is delicious both with food and on its own. It is my favorite! Aizan Polishing ratio 65 Alcohol 13%.

Be quite careful opening the bottle. It blew out. The carbonation was stronger than that of "Nakanori-San Awami-Yoba," and I struggled with opening and closing it repeatedly. When poured, the carbonation was amazing. The top aroma is like a lactic acid drink. When you drink it, the carbonation and sweetness spread out and it is very refreshing. It is very refreshing, and with only 6 degrees of alcohol, it is easy to drink. It has an atmosphere like a lactic acid sour. It is a delicious sparkling sake. I want to drink it very much on a hot summer day. Looks good as a welcome drink or toast on special occasions. It goes well with Famima's lemon flavored smoked tongue, which I drank in one day, I like it! Miyamanishiki Polishing ratio 55 Alcohol 6 degrees Celsius

The initial aroma is that of citrusy senkou. When you drink it, the slightly carbonated and sour taste spreads and a slightly sweet and pleasant bitterness gradually fades away. The aroma is fruity. It is milder than Kabutomushi. Perhaps because the bottle is transparent, it has a clear and transparent image. It is good on its own, but I prefer it during a meal. It goes well with Soboro-don. It is like a slightly bitter version of Yamazan's Shisui. It has a complex taste. It can be drunk by itself, but it is better to drink it during a meal. It is good for those who do not like sweet taste. It goes well with chicken and pizza. Hitogokochi Polishing ratio 60 Alcohol 16%.

There is a gas escaping sound when the bottle is opened. The top aroma is fruity and citrusy. When you drink it, a slight carbonation and sweet acidity rush in, and it is quickly cleared up. This is delicious. The pleasant bitterness makes it easy to drink, like champagne. The sweet, sour, and bitter taste is somewhat complex, but it is well balanced and easy to drink. It is good both on its own and with food. The aroma is that of pure rice. It is more complex than Yamazumi's Yamakaze and easier to drink than Hatsuyuki. It has a slightly dry aftertaste. The top aroma is slightly honey-like. When you drink it, it has a sweet taste with a dry aftertaste. The taste is rather dry. It has a slightly heavy and wet taste. The overt aroma has a classical flavor. The label on the back of the bottle says it is recommended to be served lukewarm, so I tried it. The aroma was that of junmai (pure rice) with a slight sourness that gave it a mild and relaxing flavor. It can be served either lukewarm or cold, and is perfect as a mid-meal drink. Similar to Nishinomon or Tedorigawa? It went well with thick fries and pork cutlets. 3 days later, it became sweeter. This may be one of the best tasting sake if you let it sit after opening the bottle. It went well with stewed Hokke and chicken wings. It also matched well with Nerunerunerune, a freshly picked strawberry flavor. Kinmon Nishiki Polishing ratio 49 Alcohol 17%.

The top aroma is slightly savory. When you drink it, the sweet, sour and dry taste spreads. There is also a slight carbonation. The bitterness is moderate and easy to drink. It is a little heavy, but light and easy to drink. It is different from the Yamahai-brewed Kuroemon of the other day. We were surprised at how much it has changed. However, since it was made in January 2022, it had an old sake feel. Yamae Nishiki Rice polishing ratio 65 Alcohol 13%.

The top aroma is smoky and fragrant. When you drink it, the fragrance, sweet and bitter umami, and astringency spread. It also has a slight sourness. The aroma is also fragrant, and since it was made in 2021, it may have been aged for a long time. Is it the flavor of Yamahai? Rather than freshness, it tastes like a sake that has been aged for a long time. This is a deep taste. However, I may not like Yamahai. It goes well with pudding because it makes me want something sweet. However, it was too long for being a draft sake, and it had a great savory and astringent taste. I still thought it should be drunk immediately. It is similar to Kuroemon XVI's Aki-agari Yamada-Nishiki, which is once-hot-brewed. On the second day, it became a little milder and easier to drink. When warmed to lukewarm, the aroma became more pleasant and the sweetness and acidity became more pronounced. I drank it with undiluted melon calpis and it became very tasty. I recommend it. I can drink it without hesitation. I think I will be addicted to mixing it with Calpis. The sake has a bit of an aftertaste, but the sweetness of the calpis is more noticeable than the astringency of the sake, so it is not just sweet, but delicious. There is almost no topical aroma. When you drink it, you will taste a firm, sweet, slightly heavy flavor, followed by a light acidity that spreads. It has a heavy flavor, but the sharpness is also rather good, so it is tasty without being bothersome. The acidity is milder than that of Semishigure. The aroma is mellow. The acidity in the aftertaste is pleasant. It goes well with a pork bowl. It seems to be similar to something, but I can't remember what. Is it like a thicker and sweeter version of Senkou? The initial aroma is of ripe bananas. When you drink it, the sweetness precedes the sourness and bitterness, which spreads in a good balance, and the sweetness remains gradually. It is delicious. The aroma is gorgeous and fruity. The mouthfeel is rather robust and gives the impression of being smooth and smooth. It is quite sweet, but the acidity and bitterness are weak but well balanced, making it easy to drink. It is also rather sharp and disappears quickly. There are times when you can feel a slight tingling sensation, which is accentuated and delicious. I drank it by itself, but it seems to go well with food as well. It is perfect for sipping while eating. It is sweet and juicy with a little bit of sweetness. Is it similar to Mikotsuru or Kuroemon XVI? The second day was as good as ever. Almost no change in taste. It went well with tuna nameko and bonito saketora during the meal. It is also good in the middle of a meal. My favorite! Kinmon Nishiki Polishing ratio 59 Alcohol 16%.

The top aroma is faintly fruity. When you drink it, it tastes sweet and spicy, and gradually becomes sharp. The nose is fruity and gives the impression of being pre-dawn. The second half has a slight alkali taste. No bitterness or carbonation. It is better as a meal than as a stand-alone sake. It goes well with deep-fried tofu and tuna sashimi. Is it similar to the Junmai Ginjo of Kinuhana before dawn? Thinner and lighter in flavor than expected, with a soft and smooth mouthfeel. A little different from the usual Junmai Ginjo Nama Ippon?
