The initial aroma is like honey. When you drink it, a strong acidity or sourness spreads, and it has a slightly carbonated feel, which gives it a sharp kick. This is delicious. The sourness is addictive. The aroma is that of junmai (pure rice). There is not much sweetness, but a pleasant dry taste. It can be enjoyed on its own, but it is recommended to be drunk with food. It is drier and more sour than Mizuo's raw sake. It went well with stir-fried pork belly and bean sprouts, and the sourness continued even on the second and third days.
