I wanted to drink Hiroshima sake, so I bought this bottle at my favorite liquor store. Every time I drink it, it has a wonderful pear? Muscat? The freshness makes me happy 😆. Not only is it low in alcohol content and easy to drink, but the fizziness that covers the entire bottle and the clean, crisp aftertaste bring the whole refreshing experience together...mmmm great! 🍶✨ I paired it with oysters and it is perfect. It was the perfect marriage. The area around Hiroshima Saijo is my relatives' hometown and I feel close to it, so I would like to pick up this sake again and again in the future. ☺️

I was on a business trip to Aizu and came close to this brewery, so I bought this sake without any complaints and had it at home. I had already tasted the Collage many times before, but this was my first experience with Miyazumi. The result is a full flavor and sharpness, I like this type of sake! It would be good to drink it with oden during this season 😉. I will try it with Collage in the future.

We had this sake at Sebun Nigo in Akasaka in late October. As expected from the Takachiyo Sake Brewery, which insists on using only one rice for sake, the sake had a great balance of umami and elegant fruity flavors! It went well with the dishes with excellent soup stock, and despite the lively label, it gave the impression of a quiet sake. However, that may have been due to the atmosphere of the restaurant 😆.

It was recommended to me by the liquor store where I work, and I enjoyed it at home! I felt that the characteristics of Sentori were raised one rank in all items. It has a deep flavor, a good mouthfeel, a good aftertaste, and a nice flow from the time it is brought to the mouth to the time it is swallowed, or even after it is swallowed. Thanks to the liquor store, I feel like I have to show up again before the end of the year (laughs).

Well, the first sip of a cold one gives the impression of a well-balanced refreshing type. As the temperature gradually rises, the umami comes to the surface. Personally, I am the type of person who also wants umami, so this was a totally welcome change 😁. I had it with smoked fish, too, and it was perfect! 👍

It was recommended to me at the store😊. Takebayashi has the image of a hiragana 4-letter brand, but it's a spring-only sake and the name "Hoshi-Oboro" is cool, so I chose to drink it w It has a moderate umami taste with a touch of acidity and astringency, making it easy to drink overall! I paired it with a smoked fish appetizer, and yes, it's good! 👍 I'll keep that in mind!

This was another rare sake that I was able to receive. I have had a variety of Houou Mita, but this one was a limited edition made from Mita's Gohyakumangoku, so I ordered it immediately! As is typical of Houou Mita, the combination of fruity and clear lightness is wonderful. I had it with broiled eel, and I can see how it could be matched with broiled eel. It washes well in the mouth, but leaves a nice lingering aftertaste 😊. I hope I get a chance to drink it again 😁.

I found a "mashu" that is limited to restaurants! Recently, there has been an increase in "sake made with rice that tastes good to eat". I can feel the spirit of challenge and thoughts of the makers. It tastes good to drink too...melon? Melon? Muscat? It has a sweet and sour aroma of green fruits, like melon or muscat, and is very elegant. It goes well with a variety of dishes.

Mitsui no Kotobuki with washed carp. It was the best combination 😌. Carp sashimi served with vinegared miso is washed down with sake with a refreshingly sour aftertaste. It complemented the taste of the accompaniment well. Well, it was wonderful!

Kuheiji is one of my favorite sakes and this time I got the La Maison Omachi. It was made in February, so I bought it a long time ago, but I left it in the fridge and now it's finally my turn to drink it😄. This sake is famous for its reputation as a Japanese citrus wine, and it has the feeling of being a hassaku! A marriage of citrus? I think it goes well with any food that has a citrus marriage. This kind of sake with a good balance of moderate acidity, bitterness and umami is unstoppable👍.

Purchased at a sake fair held at a nearby supermarket ♫ I had a good memory when I drank the design of the sake, so I decided to buy it right away. The acidity and bitterness that comes right after the refreshing taste is wonderful. You can also feel the umami well and the throat is good👍. I really like many of the Akita sakes.

When it's cold, the freshness is too much, but when the temperature rises a little, you can feel the lingering flavor and realize that it's been brewed with a perfect balance. Today, I paired it with salted beef tongue, but among all the sake I can drink at home now, Harushika was the best. I want to taste the atmosphere of calmness after tomorrow, so I will stop at this point.

I found it at a local liquor store and bought it right away because it was made with Shiratama (white rice) for the sake, took a lot of time and effort to brew, and was made by the charismatic Toji Sato-san (^^). The tangy aftertaste goes on for a long time, and the moderate bitterness is blended well, while the sharpness is wonderfully delicious sake! I love the way it makes me feel when I drink it.

This sake was recommended to me by the owner after drinking Haneoya. The blend of sweetness, bitterness, and umami in the fruity taste is irresistible! The sake has just the right amount of sharpness to make it easy to drink, and you can easily finish three cups. It was a perfect match with Yakitori with moderate char. It's a miracle that I found this on April 14.

333rd Anniversary Commemorative Sake: 33% Yamada Nishiki Polishing Ratio This is a wonderful sake with a smooth mouthfeel and an elegant sharpness without any gore or bitterness. Not only does it taste great on the tongue, but it also has a strong ginjo aroma and a moderate citrus flavor! Not only that, but what can I say, the cost performance is fantastic. I'm glad I drank it as recommended by the owner.

It's tangy and slightly fizzy, and at the same time, the flavor and bitterness are plump and spread out and melting, it's so good! You can feel the grapefruit element, but it's elegantly finished so it's not too assertive. It is supposed to be drunk chilled, but I found it to be a wonderful sake with a good balance of various elements. It's a one-ounce bottle, but I think it's best to enjoy it while frequently returning it to the refrigerator. Yes, it's fresh, but it has depth, and it's good.

We had a very standard Nambu Bijin Junmai Ginjo. Today, we paired it with white meat fish. I like the balance of the crisp and moderate acidity and bitterness at the back of the throat. Overall, it's got just the right amount of taste, and it's really stable!

I opened a bottle of Hope, which was made in March. Someone described it as a "light cider" in a review, and I can taste exactly that type of flavor. However, it has a mellowness and freshness that goes along with the flavor, and it's delicious! It has a clean throat, but in fact, it contains a variety of elements. It's a wonderful sake where you can feel the commitment of the assemblage and the positive spirit of challenge.

When I sipped it while it was chilled, I was a little surprised to find that it was mellower than I expected. I strongly agree with the brewer's goal of creating a sake that combines the umami of the rice with a dry taste. As the temperature rises, it becomes more rounded and the umami becomes a little more dominant. The sharp, spicy aftertaste is really distinctive, and it's perfect for the low-flavored snacks I've been into lately! (Today we have smoked mackerel)
