The top aroma is slightly sweet with a hint of koji and rice.
The palate is full of juicy rice sweetness and umami with a hint of acidity.
It finishes with a slight holo-bitter taste.
The sake rice is Gin Karasu, which is grown by the toji himself, and it is a bit expensive, but if you think of it as Tasake's Jungin class, it makes sense and I think the taste is competitive as well 🤔.
The white pigeons are delicious this year too 😊.

It's true, 8/10 is the day of the dove. ‼️ I drank it without any idea at all 😂 but the Gin Raven Hood is still delicious, and of course the white dove is delicious, it was good! LOL!
Sake with a hint of hops.
It may not be to everyone's taste, but I like it.
The slightly spicy hops accent the sake and give it a unique sharpness. This is a sake I would like to continue to pursue in the future.
While the sake has a slightly sweet taste, it still smells like it has been fire-aged.
I like it if it is this perfect, but it is hard to buy it when you know that you can drink it cheaply and deliciously if it is not fire-aged.
It is a wonderful sake.
Summer has come and gone.
I thought I might not have a chance this year, but I managed to slip in.
My memory is not good enough to compare it with last year, but both last year and this year are delicious.
It has a light aroma, a fresh mouthfeel, and a gentle sweetness. The acidity spreading in the middle is pleasant and characteristic, creating a cohesiveness and a crispness that leads to a sharpness.
It was good to drink it before the rainy season started.
Summer.
This is the first summer sake from Gagakuyo.
The alcohol content is 10.5 degrees. Thank goodness. The aroma is subdued, but the freshness and slight gasiness make it pleasant on the palate.
It is refreshingly sweet, and it is indeed possible to produce such a great taste with such low alcohol content.

It is strange to encounter alcohol, isn't it? For some reason, I can catch a beetle without even being aware of it, but I can't find red-built jade even if I want it. I wonder why?
Special Unblended Sake of Tasake, limited to Imanaya.
I let it sit for about 6 months 😌.
The first aroma is slightly mellow and sweet.
When you put it in your mouth, it has a mild sweetness with a hint of acidity.
It has a light aftertaste, as is typical of Hanafukuyuki sake.
Although it is a pure sake, it is only 1 degree higher than regular Tokujun at 17 degrees, so it may be a little thicker than this year's Tokujun 🤔It may just be my imagination lol.
But still, this year's Tasake Tokujun is well-balanced and delicious 😊.
Last year I felt it was a bit sweeter, but personally I like this balance of this year's.
Aiyama in Daimine. Last time it was the cool black one, but this time it was the normal version. I think the black one was unfiltered raw sake.
The black Aizan was quite strong with a unique bitter-sweet taste that made me a little tired of drinking it, but the fire-aged version has calmed down a little and is easier to drink.
Personally, this is enough for me.
However, I still think Yamadanishiki is the best for Omine.
Urasato's Junmai Namaisake🍶.
The nose has a sweet aroma typical of Ogawa yeast with a hint of melon🍈.
In the mouth, there is a juicy sweetness with a slight acidity.
It finishes with a slight astringency.
After about 3 days after opening the bottle, the melon aroma and taste both increase and it becomes sweet and juicy 😊.

Takacho Bodaimoto Junmai Sake
I always drink Kaze no Mori, which has a strong image of being clear and refreshing, but I had never had Takacho before!
It tastes like an elegant kijo sake with a strong sweetness!
It is recommended for those who enjoy sweet sake, but for me personally, it was perfect to sip it like a dessert!
The other day, a sake-loving classmate visited us and we had a sake party!

Stable quality. The aroma is not that strong, but when you drink it, it is fruity. The sweetness and sourness mix well, and the bitterness finishes off the taste. This feeling is also typical of Abe.
The impression at the beginning and at the end is different because it was drunk without mixing the orikara. However, the orikara feeling was not so strong at the end either, so it might have been better to mix it and drink it evenly.

This is a ginjo-spec draft sake made with local sake rice, Tamakae, and brewed in a wooden vat. It has a soft and rich aroma in the mouth, but at the same time, it has an exquisite balance with a sharp taste and a smooth throat. It has a very carefully crafted feel.
Firmly effervescent.
It has nothing to do with the taste, but when the sealing paper is a sticker, it doesn't look clean when opened. Maybe it's just the way I open the bottle.
I understand that the design of the bottle and the sealing paper are suitable, but I wonder if it would be possible to make the adhesive less sticky or to add adhesive to some parts of the bottle.
But what's the point of the sealing paper if it comes off cleanly?
I don't know, but it tastes good.
When opened, it has a good amount of fizz, and the crisp umami and balanced sweetness of Yamada-Nishiki make it a perfect match.
Even if the fizziness weakens a bit, it is no problem at all because of the great base flavor.
The only thing I can do is forcefully diss the sealing paper.
