Sumikawa Brewery, which has produced many popular sake brands, such as "Genjiten" and "Ippo," has created its newest series, "Jundo Ichizu. These words were given to President Sumikawa by his mentor, Koichi Yoneda, a Tajima toji (chief brewer), when he was an apprentice. He still treasures these words: "No matter what happens, you must live your life dedicated to sake brewing, now and in the future.
The ginjo aroma is gorgeous and lychee-like, and when you drink it, the sweetness spreads like the honey of a well ripened apple. While the umami and sweetness have a strong presence, the moderate acidity adds a refreshing touch. This gives the sake a refreshing and light aftertaste despite its rich flavor.
Jundo Isshu Series
A new series of Junmai Ginjo-shu with a 50% rice polishing ratio. Each month, a total of seven different types of sake rice are used, and the characteristics of the rice are maximized. The sake is unfiltered and once-fired, so it retains the freshness and original flavor of the sake.
