It is hard to find a sake with such strong aroma, acidity, and umami. I think it goes well with Chinese and spicy food. I prefer it at room temperature or higher.

I drank a freshly made one last year and thought it was not to my liking, so I used it as a cooking sake. I thought I didn't like it, so I used it as a cooking sake, but there was only a little left, so I decided to try it and found it to be delicious.
