Junmai Daiginjo of Tedorigawa using "Hyakumangoku No Shiro" sake rice, which is my personal favorite. Today, I had a chance to listen to Mr. Yoshida, the president of Yoshida Sake Brewery, and I was so impressed by his passion for sake brewing that I'm going to share it with you tonight (^^) After listening to the thoughts of the brewer, the taste is exceptional! It is a junmai daiginjo spec, so you can taste the ginjo aroma, but it also has a spicy and refreshing flavor, and the taste is well-balanced! I like the balance of Tetorigawa the best among the sake made with Hyakumangoku No Shiro.

A new product from NEXT5, a unit formed by young brewers from five sake breweries in Akita Prefecture. The new product is a monthly release, starting in August, of a product that shares only the same rice, but has each brewery's own characteristics. The August release is by the Kuribayashi Shuzoten, famous for its Haruka sake. According to the Internet, the sake is so popular that it is sold by lottery, but it was sold at a liquor store that I often go to. The taste is a Junmai Daiginjo, so you can feel both the fruity ginjo aroma spreading on the palate and the delicious sake-like flavor, but with a soft mouthfeel that is very satisfying to me personally. Today is the end of my pre-bon workday, and tomorrow is my holiday, so I opened the bottle, and it looks like it will be a good start to the holiday weekend!

Tourmai? Not Junmai? I was curious and picked it up at the liquor store. As the name "Tourmai" implies, there is a different sake rice for each month of the year! The label on the back of the bottle says "This month's rice is this month's sake rice. The Yamadanishiki version for May and the Omachi version for July were on sale at the liquor store, but as an Omachi fan, I chose this one (^^). The label is designed with a "bird of the month + ears of rice" design, but the Yumachi version has a swan? The Omachi version has a swan? This design, combined with the ears of rice, makes it look like a phoenix or phoenix. This design is also cool! The taste is a little spicy and refreshing on the palate, but there is a long-lasting aftertaste as it flows down the throat. I was impressed that even with a low rice polishing ratio of 70%, it is possible to produce such a refreshing taste. It might be a good match with Iburi Gako (pickled ginger) or something similar. I will drink it with a wish that it will stand up like a phoenix at work, produce results, and bloom like a flower in full bloom!

My first Kagawa sake. I was looking forward to opening the bottle. The label is stylishly designed with the words "Kawazuru" and two cranes! The online description said it was a low-alcohol sake with a sharp impression with a pleasant acidity and a delicious taste of rice. My first impression, based on my own judgment and prejudice, when I actually drank it was This is like Shinsei! Sorry, Shinsei fans, m(_ _)m, I'm open to objections (laugh). This is just my personal and frank impression. Shinsei is my personal Hall of Fame sake, so I really like the taste!

Karato Mountain" is a sake brewed exclusively at a local roadside station by the MISO SAKE Brewery, famous for its "Yuho" series. This junmai sake is brewed with naturally grown Koshihikari rice polished to 60%. It is named after the "Karatoyama Sumo wrestling ring" where the Tsuji Sumo wrestling ring, which has been (supposedly) continued for 2000 years in the local area, is located. The label also features a cute design of ears of rice in the rice paddies and a sumo wrestler entering the ring! It is a sake sold at a roadside station for tourists, right? Don't be fooled! The flavor of the rice can be felt well, and when served cold, it has a pleasant flavor without being too spicy. It may be just the right sake for a mealtime drink (^^)

I haven't had "Amabuki" for a long time, maybe 3-4 years. I saw it at a liquor store and bought it because I wanted to drink Amabuki. This Amabuki, made with Omachi and Ichigo yeast, won a gold medal at the 2022 IWC (International Salmon Challenge) held this past April. There is an anecdote about this sake that it became the talk of the town the following year when footage of Arashi's Aiba helping to prepare this sake was shown during the 2010 Kohaku Uta Gassen (Red and White singing contest). The first thing you taste is the slightly spicy flavor that is typical of Japanese sake, followed by the ginjo aroma. The ginjo aroma comes after that, and I don't think it has a strong fruity flavor such as strawberry. This is just my personal opinion.

A summer sake version of our favorite Yoshida Kurau! It is a low-alcohol, pure Junmai Daiginjo made with "Hyakumangoku no Shiro," which is my personal favorite sake rice at Modern Yamahai. The label is stylish, with a black color reminiscent of twilight and a woman trying to dance! The spring sake "Hello & GoodBye" also had a relatively low alcohol content of about 13%, but this one is 9%. It is about the same as a strong chu-hai. The taste is very light, with a sweet ginjo aroma, as it is a junmai daiginjo. ...so I found myself drinking more than half of a 4-ounce bottle at once (^_^;). As the name suggests, both the label and the taste would not be out of place if young people drank it by the bottle while watching street dancers at night. It is just an image (laugh).

My first "Choyo Fukumusume". My personal Hall of Fame brand is "Toyo Bijin" and I also like "Gohashi", so I have a good image of Yamaguchi Prefecture's sake (^^) The lapel is an active one, with a Japanese-style girl in kimono holding a sake cup and a sake cup, skydiving with a cat. This sake is made by aging Shimane Prefecture's sake "Tamasakura" in red wine barrels that played an active role in Niigata Prefecture's Fermier. 2020 was the year it was released, and I bought it from a local liquor store that had cold storage. It has a reddish color because it was aged in red wine barrels. One sip and you can certainly taste the red wine flavor. But it also has the flavor of light, dry sake! Mysterious taste. As the name "Adult" suggests, it tastes like an adult. The label is also stylish with a mature design. Hmmm...I thought about what snacks would go well with this, so I paired it with cheese and chilled tomatoes that I had in the fridge. But it seems to go really well with strong-flavored dishes.
