Until last year, it was basically fire-aged, but this year they started serving it fresh.
The character in Kenji Miyazawa's children's story "Yamanashi (Wild Pear)", which is also in elementary school textbooks, is a character in this sake. The sake is named after Clammbon, so you can feel the fruitiness and freshness 🍶.
I think the story ends with a story about a wild pear that turns into sake when it sinks into the river.
