How many years ago was it that I visited Higashine Onsen in Yamagata?
Yamagata is not only home to Jyushiyo and Zao, but also to a wide variety of sake and hot springs.
Sake and hot springs are plentiful and of good quality.
And the quality is good.
Yamagata has both the sea and the mountains, so there is sake from the sea and sake from the mountains.
Both are excellent.
Yamaboshi is a mountain sake.
It was the first sake I drank or made as a gift. It was supposed to be a dry sake with a sake strength of 28, but perhaps it was because it was unpasteurized, or perhaps because it was made to be easy to drink. It was supposed to be a 70% polished sake, but it had a refreshing flavor, and when I swallowed it, I was surprised. It is a delicious sake that will make you numb and get you drunk.
I personally love Yamagata, including Hijiori, Zao Onsen, Hanabayo, Kamikigen, soba noodles, and taro stew. I want to visit again.
