There were two types of sake on tap, but I chose this Yamahai, which was brewed by a toji who used to work at Mori no Midori.
When served cold, it has a complex lingering aftertaste with a slight astringency after the acidity and deliciousness has passed through.
It is quite a tasty and rewarding sake.
When warmed, the astringency disappears and the impression becomes more rounded and gentle.
Both expressions can be enjoyed, so I enjoyed it alternately cold and lukewarm, or sometimes together, depending on my mood.
