It's the season for new sake! This year, we're starting off with "Tamba-pack" Dai Shinshu 💨. Tamba is the place where the sake is pressed for the last time. The sake is bottled at the same place where it is pressed, so it's never this fresh. It's also called "direct pumping". Thank goodness! Like Nagano Prefecture? Freshness like an apple 🍎

Hirosaki City, Aomori Prefecture Miura Shuzo "Toyoupai I had this sake two years ago when I visited Hirosaki to participate in the Neputa Festival. After all, the refreshing and well-balanced taste is still the same ^^. It's easy to drink and goes down easy💦. It is brewed with the original "Toyoupai rice". Aomori's rare sake "Denshu" ✨. The sake rice, Kojo Nishiki, was revived by the Nishida Sake Brewery, and now it's only available at Denshu! It's also rare❗️ The sweetness stands out on the palate, but later on, the bitterness and the sharpness come out. It's a great combination of the fruitiness of the raw sake and the cleanliness of the infused sake.

Shield The rice used is Kame-no-o 🐢. The "Kame-no-o" sake rice that we sometimes encounter was born in the Shonai region❗️ In the Shonai region, which is famous for its rice, is the Tatenogawa Sake Brewery. After the president changed, the brewery has been rebuilding its business, and is now focusing on "all Junmai Daiginjo", "1% polished rice sake", and expanding overseas❗️🌍 It's summer, so we went with something Okinawan. I got some bitter melon and Okinawa brand pork "Kibimaru pork" 🐷

The moment you put it in your mouth, it's sake, but the aroma of fruit goes through your nose immediately❗️ The shocking aroma and taste of sake disappears immediately 🤭❗️ I think the fruit flavor is stronger than the wine because of the low alcohol content... It's not sake anymore❗️❓ It's too easy to drink 🤤 They have succeeded in creating the aroma ingredient "4MMP". Special rice? You mean the sake rice called Shunyo?

Today, we brewed "Takachiyo" series with the image of seasonal fruits. It seems to be the fruit of the color of the label! If you look at it that way🤔. The "flat rice polishing" is a method of rice polishing in which the rice is shaved flat to remove any miscellaneous flavors. Minamiuonuma City is famous for its rice and also for Shiozawa Tsumugi, a world heritage site. I'm not sure when I'll be able to go to Rokkamachi Hakkaisan Ski Resort😭. The accompaniment is green curry 🍛

Nabedana "Fudo Very juicy nigorizake from an old farmhouse Great fizz, tastes like grapefruit 🤤. No, really. Chiba's sake rice "Fusakogane" is very good❗️. Kanzaki-cho is a small town, but it's a "home of fermentation" with Teradaya Honke, a natural sake brewery.

This is one of the sake I've always wanted to drink. Nabeshima" from Tomikuchiyo Sake Brewery in Kashima City, Saga Prefecture. It seems to be a royal brand of Nabeshima, but the taste is also royal❗️ Old style The sweetness and sharpness that spreads fluffily. It's a good one. I'm sure you'll enjoy it. Both of them have famous shrines internationally. This one is famous for "Yutoku Inari Shrine" which is one of the three major Inari shrines in Japan along with Fushimi Inari and Kasama Inari✨. I'd love to visit this shrine along with the Tomikuchidai Sake Brewery.

I opened a bottle of "raw" alcohol that had been sitting for over a year. This local limited edition sake was brewed as part of the Food Hub Project* in Kamiyama-cho, Tokushima Prefecture. This is a project to connect Kamiyama's agriculture🌾 to the next generation, local production for local consumption🤔. The "W" series The "W" series is made by Watanabe Shuzo Brewery using the same method but changing only the sake rice to enjoy the difference in the rice. It has a punchy sweetness with a refreshing aftertaste. If you drink it chilled, it goes well with spicy curry. I think the level of sake in Gifu Prefecture is also high.

Last autumn, the entire brewery moved from Nakatsugawa in Gifu Prefecture to Higashikawa-cho in Hokkaido. The new sake brewery is a public-private partnership. This sake was brewed in Gifu and bottled specially in Hokkaido. It is the last sake with the Gifu seal. The sweetness of the rice stands out in this junmai sake☺️. This great decision was also broadcasted on Gaia no Yoake. Will the brewing base continue to move north...?
