I bought this sake 🍶 on my way back from a visit to Himi City, Toyama Prefecture. Fumikiku Sake Brewery, famous for "Hanyaya". Fumikiku is a local brand with a different production method. It's good to find something like this when traveling! The water used is from the Tateyama mountain range. The aroma is well-balanced, spreading softly and running out.

Denshin" purchased on a recommendation from a friend. A spring-only sake from Katsuyama City, Fukui Prefecture, which is the topic of conversation due to the opening of the Hokuriku Shinkansen 🍶🚄. It's gorgeous like a spring sake. A little bitterness comes in afterwards to balance it out. Katsuyama city is famous for dinosaurs because many dinosaur fossils have been found 🦕. I've never been there, so I'd like to go there.

Sake by Naohiko Noguchi Institute and Noto Touji 🍶. Purchased on the way home from a reconstruction assistance trip to Suzu last month. The brewery is located in Komatsu City, but Mr. Noguchi is from Noto Town and has been a Noto Touji for generations. The Noto Touji is also known as one of Japan's four great Touji, and has a history of making a name for himself throughout Japan by working in the Kansai region and other areas during the cold winter months of Okunotou. The sake is rich, as is typical of the Noto Toji's sake. but also fruity✨. Delicious Noto sake! Okunoto and Noto Touji I want to dig a little deeper

Ding Dong This is also a brand that Waka-Danna taught me. This is another sake from Ueda. I'll definitely drink it when I find it! We found a nice liquor store where we could find "Ding" 🏠. It's really good! The flavor comes rushing in 😋. It has the freshness of a fresh sake, but not coarseness.

According to the liquor store where I bought it, it is a brewery that is not widely available but has great potential for the future! It starts with a citrusy sweetness, but is dry and light, and finishes with a firm sharpness. You can enjoy the changes in one sip 🍶. Like champagne 🍸! I think the level of sake in Ueda is really high!
