Purchased when we visited my grandmother-in-law's house for my wife's homebirth. It seems to be distributed only in Fuji City, Shizuoka Prefecture, because it is a sake that can only be drunk in Fuji City. Hearing that it was limited, I was a little excited and went to the cashier. It is a junmai ginjo made from 100% Kinumusume sake produced in Fuji City. Incidentally, according to my research, it seems that the blend with Yamadanishiki is changed depending on the year, but I have never had it in other years, so I do not know the details. When you open the bottle, you can smell the mellow aroma of rice, as it is a junmai ginjo. (More of a rice flavor than a fruit flavor). The sake has a clean aftertaste with no harshness at all, and you can really taste the umami of the rice. It is very delicious! It goes well with Japanese food. It makes me want to eat simmered dishes. I paired it with cheese, boiled shako (Japanese chub mackerel), and Shizuoka peanuts. Thank you very much for the meal.

This is the second local sake I purchased in Noto Peninsula. The blue label is so gorgeous and beautiful. It was awarded a gold medal at the Clamaster Sake Competition in France? I bought it at a roadside station (Senmaida Pocket Park) near Hakume-Senmaida, a sightseeing spot on the Noto Peninsula (Wajima City, Ishikawa Prefecture) that my wife and I visited on a trip to Kanazawa. It is a pure rice sake and the price is less than 500 yen. (I think it was less than 500 yen.) So I honestly did not have high expectations for it. But when I tried it, I found it to be very tasty! It did not have much of a ginjo aroma, but the main aroma was of rice, and I thought it was a delicious sake. (It is produced by the Shimizu Sake Brewery, which uses some of the rice from Senmaida.) However, I did not feel any alcohol at all, and there was no tingling sensation on the tongue. I personally rate this drink very highly at this price! It has a strong flavor, but it is not at all tart and gives a very refreshing impression. It is a very tasty sake for the price, and I personally felt for the first time that I would definitely repeat the purchase. I would like to buy a Junmai Ginjo or something in a larger capacity next time. I paired it with a piece of horse mackerel sashimi. Thank you very much.

I opened the package because it was GW. This sake was made by the Hana-no-Mai Sake Brewery, which I had purchased when I visited my wife's parents' house. The rice, yeast, and water used for the sake are all from Shizuoka, and the sake is made from the original "Honorifuji" sake rice from Shizuoka. When opened, the sake has a subtle ginjo aroma. The mouthfeel is not at all harsh, and the sake is umami, with a strong taste of rice flavor. It is a very tasty sake that is mellow, but not too much so, and can be drunk neatly. It is a very luxurious sake that you can feel the deliciousness of the rice, which is also produced in Shizuoka! I could enjoy Shizuoka to the fullest and it was very tasty. I bought this at a nearby supermarket on my way back from a visit to Shizuoka, the home of my wife's grandmother. I had never consciously bought a dry sake before, so I chose this one. It is made by the Fuji-Takasago Sake Brewery, and the label states that the yeast used is Shizuoka yeast, which I found out is an original sake yeast developed by Shizuoka Prefecture. When I opened the bottle, I found that it was dry, but had a hint of ginjo aroma. The aroma is not strong, but rather subtle. The drink is light and refreshing, with no alcohol tingling and a light aftertaste. I was concerned because I thought it would be a dry sake, but it was very easy to drink and very tasty. I paired it with sea bass sashimi and shrimp snacks.

This is a sake that my brother-in-law gave me as a gift for joining the family. It seems to be a very hard to find sake, but he sent it to me because he was in Niigata for work. When I smelled the aroma, I could smell the ginjo aroma very much like the Kubota I drank at the end of the year. (It smells good...). The aroma gives the impression of being sweet, but when you drink it, it is not sweet and has a clean aftertaste. This is a sake that can be drunk like water. Although it contains brewer's alcohol, it does not have the stinginess of alcohol at all, and you can drink it easily. It was great with the Kakuni, scallop and salmon roe bowl. I have 1.8l so I would like to enjoy it on weekends too lol.

This year I would like to finish my drinking with the very famous Kubota Manju. It is a tax return gift from my hometown, but I put it away for about half a year to drink it during the year-end and New Year holidays lol. As soon as I poured it into the sake cup, I could smell the ginjo aroma like green apples. This looks delicious. When you put it in your mouth, you can fully enjoy the unique rice flavor of sake without the harshness of alcohol. And yet, it is easy to drink without any harshness. This is dangerous. I would like to enjoy it slowly with my wife. I will enjoy it with scallop sashimi and New Year's Eve curry soba noodles.

This is Junmai Ginjo from the Taketsuru Shuzo brewery. It is the second stage of the Taketsuru series. Although it is a junmai ginjo, you cannot taste any ginjo aroma. However, you can feel the full flavor of the rice in your mouth. I have the impression that Takeketsuru Shuzo brews sake by emphasizing the original flavor of rice. It is a sake with a basic sake flavor, but with a depth that makes it an excellent food sake. Pair it with sashimi of inada. Thank you very much.

It is the birthplace of Masataka Taketsuru, the founder of Nikka Whiskey. This is the first sake from the Taketsuru Brewery. When I poured it, I did not detect any ginjo aroma. There is no alcohol smell, and it has a nice aroma of pure rice. Also, no brewing alcohol is used, and you do not feel the tanginess of alcohol on your tongue. This is a sake that lets you taste the full flavor of the rice! This sake has a strong umami flavor. This is the third whiskey set for sale. Last time, the five girls were delicious, so I had a little bit of hope☺️. It seems to be a Junmai Daiginjo from a place called Takasago Shuzo in Hokkaido, where the raw sake is stored in an ice-cold warehouse in the brewery and only lit once before shipping. The package looks very classy and exciting. When I opened the package, I could smell a very nice aroma of ginjo and koji. When you put it in your mouth, the flavor of the rice and the mellow richness spreads out to the fullest. This is excellent! There is no harshness from the alcohol at all, and it is exactly the kind of sake that can be drunk smoothly like water! (Perhaps this one is easier to drink than the Ottersai Junmai Daiginjo polished to 30%. I want to drink Ottersai again.) It has no miscellaneous flavors, I guess you could say. This is the second sake that was sold in a set with a certain whiskey. The sake brewer is Terada Honke. It is a unique brand called Gohin Musume. Reading the enclosed instruction manual, it seems to be a sake that is particular about fermentation. When I opened the package, I could certainly smell the fermented aroma of koji along with the green apple-like ginjo aroma. It also has a sour taste, but it is not an unpleasant aroma, but rather a rich aroma like plain yogurt. (It reminded me of a sake I drank a long time ago called Kaika, which had an additional aroma to the ginjo aroma. It reminded me of a sake I used to drink called Kaika, which was also delicious.) ) The taste is not harsh from start to finish, but has a sweet koji-like richness and flavor. But it's not overpowering, and it's very easy to drink! I'm not a fan of sourness, but this sake doesn't have an unpleasant sourness at all. This sake was sold as a set with a certain rare Japanese whiskey. Inside the box, there is a description with a photo, which describes the sake's commitment to sake. I returned home at the end of November, 2021, and opened a bottle of sake that I bought in my hometown. I had actually planned to open it at New Year's, but there was another sake that I had to drink, so I finally opened it. As it is a Junmai Ginjo, it has a rather pleasant ginjo aroma. When I drank it, I felt a very refreshing sweetness from the rice. And it has very little of the piquancy inherent in alcohol! Of course, I could feel the flavor of the rice unique to Junmai Ginjo, but I had the impression that it was light and very easy to drink. It was a perfect match for a dinner with a strong flavor. This is the first time I've bought a one-cup bottle of sake. I saw it on display next to Ozeki for quite some time, and was a little curious about it, so I bought it. I drank it as a cold sake. There is almost no ginjo aroma, but it is very sweet as it is called nama-gara-shu. It has just the right amount of acidity and richness, with a tingling alcohol aftertaste. It's delicious, even considering the price and ease of use. By the way, it says on the container that the flavor changes to brandy after 6 months and to old wine after 1 year. (I'd like to compare them.) I like the idea of selling it in aluminum cans. Along with Atarime.

The souvenir shop in front of the station I wanted to visit during my return trip was closed, so I bought it at the adjacent 7-Eleven (lol). It is a locally brewed sake from the Otani Sake Brewery in Tottori Prefecture. Compared to one-cup 00-type sake, it is light and very easy to drink! It is a dry sake with no tingling on the tongue at all. I used to prefer sakes with a strong umami flavor, but dry sake is delicious! It was the second most recommended sake by my father (the first was Inadahime), but it is not so expensive (250 yen for 180 ml), so I will manage to find and buy some for myself on my way home. Along with some water octopus sashimi and aji nanbanzuke (pickled horse mackerel) given to me by my mother. Thank you very much for the food.

My friend gave me this sake from Fukushima prefecture as a gift. It was packaged in an uv-cut bag, which was very carefully done. When you open the lid, you can smell the ginjo aroma. I bought this at Tsukii Shuzo during my trip to Tochigi during GW. I finally had a chance to open it. (Or maybe it's just the Tochigi rate...) It's called "unfiltered unpasteurized sake", and the moment you open the bottle, you can hear the sound of carbon dioxide escaping. It also has a ginjo aroma, but when you put it in your mouth you can feel the strong acidity. It is not a spicy taste, but a sour taste. (It's not sparkling.) On top of that, you can feel the strong flavor of the rice. Some people may find this area to be a bit harsh or sweet. It didn't suit me a bit. (Maybe I'll try it with another dish.) I also looked at the website, and the sake itself is made with great care, and you can get a glimpse of the careful craftsmanship of Tonoike Shuzo. It's not that the sake or the brand is bad, it's just a matter of taste. I think the person who fits perfectly. Together with the skin frosted sashimi of Itoyori sea bream processed at home. It was a feast.

During GW, I purchased some local sake at Tsukii Sake Shop during my trip to Tochigi. Everyone at this liquor store is very professional and very reputable. I had a nice chat with the friendly clerk and told him I wanted to try a sake that did not tingle on my tongue, and he recommended this sake. He recommended this sake, which he said had a strong flavor, and I immediately tried it. It really doesn't tingle! And delicious! LOL! When you take a sip of Hououmida, which has a strong ginjo aroma, you will find that it does not have the tangy stimulation often associated with dry sake, but instead the umami of the rice spreads throughout your mouth. This is, you know, the standard everyday drink lol. (I wasn't sure, but I think I'll add this kind of thing to my list from now on. But for this price (it was about 120 yen before tax), the quality is still amazing. It doesn't have any of the tingling that is common in sake in this price range, and it doesn't have much of a miscellaneous taste. I enjoyed drinking it as an accompaniment to bonito tataki. Together with a memorable sake cup (Taisho Glass Museum).
