I bought this at Tsukii Shuzo during my trip to Tochigi during GW. I finally had a chance to open it. (Or maybe it's just the Tochigi rate...)
It's called "unfiltered unpasteurized sake", and the moment you open the bottle, you can hear the sound of carbon dioxide escaping. It also has a ginjo aroma, but when you put it in your mouth you can feel the strong acidity. It is not a spicy taste, but a sour taste. (It's not sparkling.) On top of that, you can feel the strong flavor of the rice. Some people may find this area to be a bit harsh or sweet. It didn't suit me a bit.
(Maybe I'll try it with another dish.)
I also looked at the website, and the sake itself is made with great care, and you can get a glimpse of the careful craftsmanship of Tonoike Shuzo. It's not that the sake or the brand is bad, it's just a matter of taste. I think the person who fits perfectly.
Together with the skin frosted sashimi of Itoyori sea bream processed at home. It was a feast.
