This will be an amateur comment from an amateur drinker. It has been a long time since I have had a Kido. It seems that they are now growing 80% Yamadanishiki low-polishing rice in their own rice paddies, and the label was nice. The taste is a great sake with a nice balance of firm umami and dryness. I have been to this brewery before and was inspired by how much they have evolved.
I am thankful and grateful to be able to enjoy great sake and delicious fish today. Thank you 😊
