This sake is made by special order from Yajima Sake Bespoke Sake Shop, and is made to the same standard as the sake entered in the competition. The taste is truly superb! It is definitely more suitable for Japanese food than for strong flavored food.

One of the pioneers of low-alcohol sake. This was shocking. The drinkability is not at all inferior to that of regular alcohol. The aroma is fresh, like green apples. The acidity is high, and it has a nice crispness to it, making it really easy to drink and delicious!

The junmai namaishu I had previously had a mild aroma derived from rice, but this time it had a slight melon aroma and a refreshing mouthfeel. I wonder if this is because it is a junmai ginjo. It can be enjoyed both cold and warmed. I thought so, but I drank the whole bottle cold... LOL!

They have been around since the first year and have only brewed one tankful. A pretty rare one to get. I think I might be confusing it with Snow Crescent. It's been aged in ice for about 8 months, so it's rounder and less sweet than Kouei Kiku. It's a good taste!

I don't really like to drink Yamahai, but I was attracted by the Omachi & unfiltered raw sake, so I bought it. The taste changed my image of Yamahai in a good way. It has a fruity aroma and the umami of rice, which is typical of Omachi, is also strong. It is also delicious with a hint of sweetness. The label is as cool as ever!
