Purchased at liquor store First Brand Name Tsukitsukatsura is Japan's first sparkling nigori sake brewer. Surprisingly hard to find at liquor stores in some areas😅. Cold sake The silkiest aroma and taste of all the sparkling nigori sake I've had. It has enough umami and thickness of rice that only nigori sake can have, but the aftertaste is refreshing. The aftertaste is quite long. Goes well with meat dishes.

Bought at a liquor store They were having a tasting sale. Basically, Junmai-shu Aso Yamadanishiki is sold only at events. According to what I've heard, it's scheduled to be sold out and only 700 bottles will be made 😭. Cold sake In the mouth, it has Wakanami's characteristic sourness and sweetness. It is light and easy to drink with an alcohol content of 13 degrees. It has a clear, light flavor and has no Junmai-shu-like quality. As the day goes by, the acidity increases a little and the width of the taste becomes wider.

A friend of mine went to visit the Higashitsuru Sake Brewery and bought this as a souvenir. It is distributed locally. The shape of the bottle is different from others, stylish and fashionable 😎. Drink it cold. Sharp and clean taste with the graceful sweetness characteristic of Higashitsuru. Slightly floral Easy to drink!

Purchase at a nearby supermarket LED Dream Yeast developed by mutating existing yeast using LEDs. I had been wondering what it tasted like for a while, and it just happened to be on sale at my local supermarket😙. Cold sake Aroma: apple-like freshness and yogurt-like acidity. Anyway, the impression was of a strong acidity reminiscent of tropical fruits. When I finished it, there was a slight sourness that lingered in my mouth after eating cheese. The sake level is -20 and the acidity is 3.0. We paired it with ahi jus.

Buy at Sake Shops Limited edition sake from a liquor store and an agricultural cooperative in Itoshima, Fukuoka but the contents are said to be Shiraito 70 🤭. I've had Shiraito 55 before, but never 70! Cold sake Smooth on the palate No Junmai-shu-like characteristics But it is heavier than Tanaka Rokuugo. I prefer Shiraito to Tanaka. It is easy to drink with low alcohol.

Kaku-uchi (drinking on the corner) In Fukuoka, there are many liquor stores that offer kaku-uchi (corner drinking) with a space for standing and drinking 🍶. Depending on the location of the liquor store and the brands they carry, the kaku-uchi system and the personalities and age range of the customers may vary. Xuyama Shuppan is famous among Fukuoka's sake shops for its warmed sake, especially for its hot sake! Start with hiya! The aroma is subdued. Light at first, but the rice flavor gradually spreads. The taste is calm and gentle, with a good roundness. When heated up, the acidity is in full swing. It's been a while since I drank a hiyaoroshi with matured umami.

Purchased at a liquor store I thought Suitama, which I had never tried before, would be delicious because Hanayuup was so good, so I chose the Urasen series 😄 which I was attracted to because of its label. It is said to be drier than the usual Suitama! Cold sake Delicate and pleasant on the palate The rice flavor is neither light nor heavy. The aftertaste is a little astringent and sharp. Rather than dry, it is rather dry. Next time, I would definitely try the regular version of Suitama.

Purchased at Saijo Sake Festival last month at Sake Merchant Yamada Chose the Hiroshima limited distribution of Hatsuichiyo Yayama! I recently learned that it is made by the same company as Sakurao, famous for its whiskey and gin 😂. Sparkling sake is often the focus of attention in dancyu and on the internet. Cold sake The aroma is subdued. Calm sweetness and gentle rice flavor Beautiful yet powerful due to its high alcohol content. If you drink it with carbonated water, the peculiarity is softened and it becomes easy to drink. 🙆‍♂️

Purchased at the 4th Kitakyushu liquor store tour It was purchased at Ura no Sake Shop in Yukuhashi. It is my first brand. At room temperature Medium-bodied Smooth but with a slightly crisp aftertaste. There is a slight sweetness. It is not that heavy, so it is recommended as a mid-meal drink. It goes well with grilled fish, grilled chicken, or salad with a crisp dressing.

Purchased at the 4th Kitakyushu Sake Shop Tour At Haraguchi Sake Shop near Tobata Station There is a corner bar that originated in Kitakyushu. I went there in the evening and there were about 2 or 3 customers and for some reason they explained to me what to order lol🤣The staff was very friendly and it was almost like a snack bar! Hot sake is recommended, but we started with hiya! Aroma of lactic acid Calm and full-bodied. Sweetness, umami and acidity are in balance. The aftertaste lingers on the palate. You may want to serve it with fatty food. When it is warmed up, it has a width and depth that is not too heavy. Powerful but not too heavy. Chiebijin is a gorgeous and fruity sake, and while many sakes are made for cold sake, this one is a challenge to make it suitable for hot sake, but it's very tasty!
