The aroma is modest, but the strength of the sake is strong.
It's not a sharp and powerful sake, but it has the maturity that only autumn sake can have.

The rarity is high.

The aroma is gorgeous.
The taste is crisp and light, but it has enough umami and sweetness unique to rice.
It is so refreshing that I would drink it in summer. I drank it while thinking about the events of this summer.
The aftertaste is normal.
It is said to go well with ginger dishes and oysters. We had it with gingerbread.

I think its rarity is quite high because it is rarely seen.

The rich taste is a mixture of umami, acidity, and richness from the Yamahai brewing process, with a very characteristic astringent taste.
The texture on the tongue is unique. It has a thick texture, or to put it worse, a slippery texture. It seems to be a favorite of different people.
When heated, the mild yet umami and astringent flavors gradually spread to the palate.
The lingering aftertaste is quite long.
Suitable for advanced sake drinkers.

Shinomine is not easily found in liquor stores outside the Kansai region. I bought it because I had drunk it several times when I was in Osaka.
I was going to buy summer sake, but they didn't have it, so I chose this one. It seems to be a year-round product.

Aroma of mellow fruit.
This sake is made from Omachi, commonly known as "Seto-Omachi," from Seto-cho in Akaban, Okayama.
It has a heavy umami, which is unique to Omachi, and a surprisingly strong grapefruit-like acidity. It also has a nice sharpness. It also has a classic flavor characteristic of Nara's sake.
It seems to go well with strong flavored food.
It is a taste that is enjoyable for intermediate-level sake drinkers.
