2023-1 Champion of Nigorinpik When it comes to nigori sake, Hirotogawa is the most famous. Hirotogawa is known for its muddy sake. It was my first time to drink it, how was it? The first day, I learned the power of raw sake while gassing out. First, a cup of sake... Yum! This is the real muddy sake. No blind spot. Day 3 Still gassy, but less fresh than the first day. Day 7 Still tasty, but the umami is not as strong as it was on the first day. Still cloudy, but the flavor has not changed much. See you next year. 2022-21 I am a repeat customer. I found the best high-cost sake last year and bought it without a second thought. how was it in 2022? The first day, a little cloudy, sweet and delicious cold! It's like a mirror of Gohyakumangoku. It is like a mirror of Gohyakumangoku, but it has a pungent alcohol taste when heated in the sun. It tastes better at higher temperatures. 3rd day: Still gassy. 2022-20 Beautiful Kyoto Sake This is a gift and is from the Jurakudai brewery of Kuranosuke Sasaki's family. The label is also beautiful. The first day, it is clear and transparent, and when you drink it cold, you will get drunk before you know it. The third day, it became cold, so I drank it hot. This is good. It warms up without breaking down too much, just the way it is. The seventh day: It is still beautiful and goes well with food, making it a versatile type of sake. 2022-19 I got to go on a sake brewery tour! We drank various kinds of sake in Niigata. I really like the sake of Shimehari Tsuru and Kintsuru. I am going to be addicted to Niigata's light and dry sake. On the last day, we visited Imadaiji Sake Brewery, and this is the girl I brought home. The first sip is a little tangy and dry on the back palate, but good for a mid-meal drink. It's good as a food sake, and quite good with 86% cocoa chocolate. It was delicious warmed up to lukewarm. We were soon treated to a delicious meal at the restaurant. First day ★★★★ Overall 3.7

2022-18 Sorry I let you sleep on it. I brought it home from the supermarket last year where it had been kept at room temperature for a reasonable price, and it has been kept at room temperature for a year. I wonder if it's OK even though it's not raw sake. The first day, we started with cold sake. No problem! No twitching. Good. The lychee aroma is as if it were low alcohol, and the slight spiciness at the end may be due to the fact that it has been aged for a year. When warmed up to lukewarm, the spiciness disappeared and the thickness appeared. This is good. The third day and onward, the quality of the sake is the same as on the first day, strong. 2022-17 Welcome malic acid! Following the 100th anniversary sake of Wakanami, we selected a local Fukuoka sake (although we bought it a few months ago). It has a refreshing image of summer sake, but we will have it as we approach autumn. The first day: Yes, it's watery, but there's no sticking point, and it flows smoothly. It is easy to drink, but there is no lingering aftertaste, and it is not so bitter or sharp as to be dry. I would like to have a little more sweetness or bitter taste. Not a good match for 13% lately... 3rd day: No big change. No increase in sweetness or tastiness, just like a white wine. This was a starter wine to be chilled in the summer! Respect-for-Senior-Citizens Day and Father's Birthday Celebration Exhibition Part 2 Chitose Tsuru Flattened Rice 80%, which I drank in Sapporo the other day, attracted me to the same flattened rice with a high degree of fineness, so I bought it. 2022-16 Old-fashioned Daiginjo This is also a gift from Tenzan Shuzo, famous for its Shichida. Daiginjo is a category I don't often drink, but how was it? The first day, it was cold and had a pineapple mouthfeel, not spicy but with presence. 17%, apparently, is not heavy, but it tastes heavy and old-fashioned to those who are used to drinking 13%. On the third day, the corners are removed and the mouthfeel is good. It has a pear-like sweetness, but the finish is clean and short. 2022-15 Star of Kitakyushu First visit This is the first "rice and agave" that I received from a friend (although I drink doburoku outside). First day: slight coloring, gentle on the palate, no alu feeling. Very clean, 92% polished rice on this one bugs the crap out of me! Day 3 The flavor has settled down a bit, and the umami is even more pronounced. The lappingis shadow of the Shinmasa is still there, but the lack of clinginess and the umami acidity may be a step above it. When lukewarm, the acidity comes out, but it's easy to drink without being spicy or oily. Day 7 The quality of the sake has stabilized without breaking down. Can be enjoyed cold or lukewarm. First day 3rd day: ★★★★ Day 7 ★★★★ Overall 3.9

2022-14 Clean, beautiful, thin The order was switched, but it was the last before Mr. Matsumoto launched Nichinichi, a warrior training from Senkou. I opened it on the occasion of my birthday. 2022-13 A Matter of Time? It is nice to meet you, Isohajime, which is highly praised for its excellent sake. It is not so easy to find it in Kyushu area, but I bought it at Hasegawa Sake Shop in Tokyo Station when I was on a business trip to Tokyo. It is a dry and delicious sake that retains its sweetness when served cold, even though it is a honjozo. This is the melon aroma of Shizuoka sake, or the bitterness takes over at the end. Day 3: Still spicy and tasty, but the spiciness is a bit harsh...or maybe that's just because it's a honjozo. On the 7th day, it is still summery, but the umami is more pronounced when slightly heated. It is a sake that I would like to drink in winter. 2022-12 Hatsu Shibori Everyday! Mr. Matsumoto was famous at Sawaya Matsumoto just when I started drinking sake. After some twists and turns, the first squeeze. I was actually planning to drink from Musha Shugyo, but I couldn't hold back and started from here. w The first day: low alcohol at 13 degrees, like Shinmasa, but with less acidity. It has almost none of the bitterness of Yamadanishiki. The aftertaste is not long. It is hard to catch. On the third day, it has a sweetness like cotton candy at room temperature. It is similar to Sawaya-Matsumoto's Gohyakumangoku, but without the fizz. Day 7 I let it sit for a while, but the flavor is rather clean, no complexity, and no spiciness at room temperature, so I thought it was water. Finished without being able to catch it! We visit Yamaga often, so we went to the brewery to try some of their other attractive lineups. The first day: almost no gassiness, a clear, slightly tasty acidity, similar to Niimasa's Lapis, but with a little more complexity. 2022-09 Safe to drink I have to drink it if a date is specified, as there are many draft sake that are kept on reserve. The first day, the taste is hard and lacks glamour. So we left it at room temperature. I thought it would open up, but it didn't. We hope it will open up tomorrow or later. The 3rd day, it becomes a little less angular and has a rich flavor, but the taste is monotonous. 2022-08 Nice to meet you Niigata Prefecture! A wonderful time to get it through Furusato tax payment, even though it is only available in Niigata Prefecture. The first day: Not a light and dry Niigata sake, but rather a orikarami-nama-shu, which means that after a moment of dryness at the mouth, a sweetness spreads. Almost no gassiness. The final taste is a slight bitterness, which I thought was unexpected. The third day, the freshness remains unchanged. The sweetness has increased even more, and it goes well with very spicy hot bean curd! And heated sake is good, too. The slight spiciness is addictive. 2022-07 TANKUMI! I had to try a local sake, so I was attracted by the rugged form and opened the bottle ⭐. The first day, a pop sound appeared, and it was quite gassy and chili, maybe a little spicy? 2022-05 Tenbi on danchu! First day, we compared our drinks with Shinsei's Lapis. If that one is Aquarius, this one is Pocari Sweat. It's a little more complex, but I like it! Day 3: I thought the flavor would increase, but it became more beautiful. In fact, I can't tell the difference between this and Lapis anymore. I let it sit for a week or so, taking a lesson from the Hakuten. To be honest, I don't think it changed that much, or I prefer it up to about the third day.
