When I bought Noto Sake, I included it in the package because I originally thought I could buy fire-brewed sake over here, but I had never seen nama-shu before. I thought Kikuhime would be more sour, but it is not so, and easy to drink. But it is easy to get drunk with a small amount because it is 19 degrees Celsius. When the temperature is raised, it has acidity, but it is not unpleasant, and the center of gravity is heavy and solid, probably due to the high alcohol content. This is for the experts... 2023-10 Sukkiri Kijoshu This may be the first Kijoshu, and it is aged for 1.5 years. I didn't wait for the recommended 3-year aging to be released. What's wrong? 2023-9 Neikase Shinsei After more than two years, the bottle was opened! My taste has changed a lot during this time... Is it because of the aging process that it is not as refreshing as Lapis? It has a pleasant complexity, but I guess the basic taste is Lapis. I enjoy a sip every day and think it is my favorite of all the COLORS because it has a good balance of sweetness, umami, and bitterness. I would buy it again if I could find it again. 2023-8 Longest 2-year lay-back ever This Nabeshima Yumachi has been put on the back burner due to the various things that need to be drunk first. Will it be a good thing or a bad thing that it has been left "next to" the refrigerator for two years? On the first day, I started with cold sake. It has a light golden color, but it is not twitchy at all! No pungency and a long umami aftertaste. The third day, it still pushes when the bottle is opened, which is impressive. A little sourness has appeared, but there is no tingling. Day 7 The umami has decreased a little. How about heating it up? Well, it's not really suitable for heating up.
