2022-04 Overhauling the New Normal Day One: To get rid of the growing contents of my refrigerator, I turn to the new normal. Simply put, it's Aquarius! It's not nearly as difficult to drink, and it's clearer. Day 3 There is no change in the taste, but I can drink it easily without feeling any discomfort. It's a bit lacking in flavor, but I'm satisfied when I hear that there are no additives. Day 7 The acidity has settled down and there is a slight sweetness. 2022-03 When there's a Kuroryu, you pick it up. How does it compare to the Kutouryuu I drank before? The taste is good enough, but it's still hard and harsh on the tongue. Day 3: Not much different from the first day, but the sharpness of the aftertaste is still not gone. 2022-02 Balance of sweet and sour On the first day, I couldn't tell the difference between silver 7, 10, and 1814, so I started with 7, aiming to complete it in the future. Very little gas, sweetness followed by acidity and finally a slight bitterness. However, the balance is good. It's still sweet, but it's not a one-size-fits-all kind of sweetness, which I like. Day 3 The complexity of the wine has lessened compared to the first day, and it would be good to finish it as soon as possible. Day 7 The wine is surprisingly well preserved, but it is still sticky sweet and not as harmonious as the first day. First day ★★★★☆ Day 3 ★★☆☆☆☆ Day 7 ★★☆☆☆☆ Overall 3.4

2022-01 First shot of the new year I opened it on New Year's Day. It's very clean and easy to drink, but a bit lacking. I enjoyed it with seared shishamo smelt. It's been three days, but it's become a little more three-dimensional and more to my liking, which is good. It doesn't fall apart at all until it is lukewarm. 2021-9 Nigori deliciousness Following Tenbi's Junmai Ginjo Nama Sake, I tried Nigori Sake. The first step is to start with the supernatant, which is very clear. The flavor increases as it is stirred and the lees are mixed in. The gasiness is weak or almost non-existent. By the third day, the taste has mellowed considerably. At first I thought it would be clean, but the flavor came out and it was well balanced. By the 7th day, the richness of the 2nd and 3rd days has faded and the aftertaste is not so strong. 2021-8 Gutsy Honjozo It's easy to drink cold, but you can feel the tightness of the final finish. It's better to heat it up. When heated, it goes in easily and has a rich flavor. It's tasty and not unpleasant. On the third day, there's a popping sound of gas, and cold sake is delicious without the harshness of the first day. On the other hand, it's not so good when it's heated up. Warming it up is best. On the seventh day, it is even more angular and tastes like a ginjo-shu, with no lingering aftertaste, but a bitterness comes out on the tongue at the end. However, considering the price, it is quite excellent. When it is near room temperature, it becomes quite round or three-dimensional. It will be a definite repeat next year. 2021-07 Clear Cat It's not as acidic as I thought it would be, but it's refreshing and certainly a mouthful to chill in the summer. There is no unpleasantness at all, but the aftertaste is relatively long. The finish is relatively long, and it is not tiring to drink. First day ★★★★☆ Finished on the second day for various reasons. 2021-06 Abundance Thanksgiving! Cheers to 3 days late as sake nouveau. It's a balanced sake. It's a balanced sake that keeps throwing itself at the right spots down the middle. It's lightly nigori, but not too complex. There is a slight bitterness near room temperature. The third day I don't like it so much because of the three-dimensional feeling or the astringent feeling in the latter half. I decided to let it sit for a while. 7 days +α Oh, was it such a beautiful feeling? The impression is better than the first day, but I can't get rid of the impression in the middle of the day. 2021-05 Hatsu Tenbi! Almost no gas, it goes in easily without any miscellaneous flavors, but it differs from Ottersai's 20:3 in that it is lighter. It's not as light as the Otters. On the third day, it is even easier to drink, leaving no residue on the tongue. On the 7th day, there is a richness that comes out suddenly, and while the cleanliness of the first day is gone, you can feel the sweetness without being disgusted. Great with smoky bacon! Delicious. 2021-04 What did you think of this popular brew that you bought at a fixed price? Opened the bottle two weeks past the quality assurance date. The gasiness is quite weak. It smells fluffy and disappears quickly in the middle. It has a sour taste, like a 21st century pear. It's more like a new normal than a sake... On the third day, the aftertaste starts to linger a little and stays until about 15 minutes into the second half of the game. The sweetness comes out a little, but it doesn't linger on the tongue, and it disappears quickly, so you can't help but sip it. Even after a week, the sweetness does not dull and remains at an elegant level. It's best to leave it for a few days. First day ★★☆☆☆ The third day ★★★★☆ The seventh day ★★★★☆ Overall 3.8
