A junmai daiginjo with a very good balance of umami, sweetness, and aroma. This Michinoku sake was brought to my wife when she returned home by her father-in-law. Thank you for everything!

My wife bought this sake after it was recommended by Mr. Sakaizendo in Fushimi, Nagoya, who said it would change the concept of sake. It has a great balance of fresh acidity without being too sweet and is full of umami. She said she liked junmai ginjo, but if she hadn't been told, I would never have thought it was honjozo, and if I wanted, I could just drink this all the time. It's really good. 100💯.

It was written on the label. The name of this sake, Hiwa, means "a perfect day. It said that this sake was brewed to color everyone's sake day with wonderful memories. I am happy to have met this sake on my wife's birthday. It is light and fruity, but has a very nice flavor. It was a great party, and it was so easy to drink that we ended up finishing the bottle. As expected of a 90% recommendation from Sake Sento in Fushimi, Nagoya.

Sake given to me by my father-in-law from Yamagata. It has the fruity flavor of a daiginjo, but also has a strong sake character. I paired it with sashimi of sea robin and kijihata grouper that I caught on an expedition to Tsuruga.

I visited Shimane Prefecture's Onsen Hot Springs on a Golden Week van trip. We were knocked out not only by the iron-like hot spring water, but also by the nostalgic and tempting hot spring town, which is gradually attracting new and fashionable stores, and decided to spend an unscheduled overnight stay. We purchased a bottle of sake at a sake brewery located in such a wonderful hot spring town, just a short walk from the port where a quiet father keeps a store. It was described as a sweet-tasting, deep, unadulterated sake, and the aroma was just like sake, but without the weird sweetness. The second and third sips are better than the first. It is a good sake for a mealtime drink. 70

I met him at a sake brewery in Kurayoshi City, Tottori Prefecture, during my Golden Week San-in and San'in-Sanyo Van Trip. I bought it immediately when I heard there was only fresh sake available now. The aroma was delicious. It is a perfect example of junmai ginjo. 85

A colleague who loves sake and knows Nara well gave it to me and I brought it on a Golden Week van trip. This is delicious! It's too good! It is sweet but has the tingling sensation of raw sake, and is a good thing that goes away quickly 😋 100

Organic sake made by wineries during the off-season when they are not making wine. The atmosphere is completely wine, but when you drink it, it is sake. This is a hard-to-find gem that I purchased immediately upon arrival at Sake Sendo in Fushimi, Nagoya. It is a fusion of a raw sake tanginess and a delicious sweetness that is similar to ROKU SIZUKU after a long time. This is the kind of sake I would drink in a heartbeat.

When I asked for a recommendation at Sakaisen-do for a good one to go with sukiyaki, he recommended it to me. The sound and aroma when opening the bottle was exactly like champagne. It has a delicious flavor, but with a freshness that is unique to nama-shu. I can't describe the taste well, but this is a bad one.

It has a refreshing acidity that is typical of nama-zake, a refreshing citrusy subtle sweetness, and the umami of the rice. The wife is a great admirer of this sake. 95

It smells a little like melon at first, and the aftertaste is also melon? It has a strange sweetness and freshness without any unwanted sweetness, and the aftertaste is so sharp that you can drink it as much as you want. Satisfying. 90%.

It has a subtle sweetness, and the aroma comes and goes so quickly that it makes you want to take another sip right away. I drank it while saying, "I don't need any snacks, just this." I tried it with sashimi such as aji and sayori, and it was great. It was great with sashimi such as aji and sayori, and I thought it would go well with all kinds of food. It was available for pre-order at Sakaizendo in Fushimi, Nagoya, a few months after I made my reservation. It was worth the wait!

Took it home as a souvenir from a trip to Kyushu. The first bite was "Hmm? Spicy and sake-like?" But when I paired it with fatty tuna salmon sashimi and tempura, it was perfect. It cuts through the fat quickly, but the freshness of the junmai ginjo is very noticeable. As expected of a sake served in ANA's international business class. 89

It is gorgeous, but not too sweet, and when paired with the thick "hoba miso" miso, it cuts through the richness with a refreshingly smooth taste. This is a dangerous sake that is so delicious that you will drink as much of it as you can.

I was going to pair red wine with miso oden with beef tendon, but at the request of my wife who wanted to drink sake, Kurikomayama, which I bought as a souvenir on my New Year's trip home, made its appearance. The aroma is sake-like, but with just the right amount of fruity flavor, yet it is refreshing and cuts through the fat. Delicious!

Not strong but uniquely aromatic. It has a strong sweetness from the rice, and because it is a draft sake, the young feeling comes to the fore. It would have been more suitable for a flatbread sesame miso pork hot pot than sweet salmon, but I'd rather go with this alone as an aperitif. 80
