This is a Kanazawa exclusive that I came across when I stopped by Kasa Kanazawa. It is a small local sake brewery. The Junmai Nama-jozo was fresh and fresh, with a pleasant sweetness, acidity, bitterness, and a twist of bitterness that kept me coming back for more. It is a very elegant sake that goes well with a wide range of dishes. It was a very nice encounter in Kanazawa.

I came to Fukui to eat crab. At a local liquor store, there are Kuroryu, Bon, and Hanagaki. Kuroryu and Bon are popular locally because they can be drunk in Kanto, Ono is delicious because of its good water, and winter Shiboritate was recommended to me as it was the last one and I should lose. I resisted the idea of honjozo, but it's delicious! Because it is a draft sake, it has a deliciously rich mouthfeel, yet is sharp and tasty.

It has been a while since I have had a Koei Kiku. I opened it at the same time as Sentori Asashibori and others, but this one seems to be the most well-balanced. I had just bought some prosciutto ham, and it goes well with it.

I stopped by Sogen on a trip to Noto and tasted it and enjoyed it so much that I wrote a book about it in the storefront Gentei at Ishikawamon. I had not had a chance to encounter it again, but I was waiting for a draft sake, so I bought it. It is straw-colored, with a pleasant aroma of wood vat, full-bodied, full of acidity and umami, and goes well with sashimi and fatty foods. It was also perfect for potato salad. It is a very good wine. The taste is very good, but the cut is still relatively good. 😃😃

Tokujun Yamadanishiki. Compared to the standard, the mouth opening was youthful, bitter, and sweet while being strong, and I wondered what to do with the mess, but as it settled down, it came together. The attack is a mixture of sweet and sour and bitterness, but it comes together and goes away cleanly. It's an elegant special pure.

Daruma Masamune is famous for its old sake, but hiyaoroshi is the state before maturity. It retains its youthfulness, and when warmed up to lukewarm, its tenderness spreads and envelops everything in its gentleness. It makes me feel happy, even when I have a hard time at work, everything seems like a small thing. When I see Daruma's paintings, I feel more and more relieved. 🤗

I opened it for an aperitif. Green apple, pear aroma, sweet and sour honey-like opulence. The mild wood vat aroma is pleasantly sharp and the bitter sharpness to the aftertaste is pleasant. It makes you feel very rich 🤗.

I met this sake in October when I entered a campaign for Sake Day. I carefully opened this Junmai Daiginjo from Gunma. I thought it would be dry, but it was sweet to the core 🤗. After a while from the first sip, it started out sweet, but now it has a bit of a sharpness to it. I think I prefer Kido Junmai, which costs 2,000 yen for a bottle 🤗.

Harushika started this series because of the toji's desire to pass down the wooden vat brewing method to younger generations. It is a four-stage brewing process, and I bought a bottle of Deleted Hashiroshi because of the difference between Nama Hashiroshi and Hayashiroshi, and Hayashiroshi is recommended for beginners. I was told that Nara sake is sweet, but it develops an elegant syrupy sweetness. I didn't detect much of a wooden vat aroma, but the shape of the bottle suggests it is aiming for sherry? Harushika has high potential.

It seems to be a back version of the original Shiboribana. Next to it is the Shiboribana. When I mentioned at a local sake shop near Toshodaiji Temple that Shiboribana was delicious, the owner recommended this sake, saying it was the original version. It is a pure sake, so the alcohol content is once high. It has a little sourness, which I prefer 🤗. Harushika was the first time I took my time drinking it in Nara, and it may sound strange to have a sake brewery in the city, but it's delicious!

I planned a trip to Nara two years ago but gave up. After 2 years, I came to Nara and a local liquor store recommended this product to me. I heard it was a seasonal product. There is a sake brewery in the center of Nara and it seems to be a familiar sake to Nara citizens, but I had never encountered it in the Kanto region, although I knew the name. Most of Nara's sake is sweet, but this one is sweet but has acidity and tastes great! I bought a four-pack bottle for hotel drinking 🤗. The next day, I went to a local sake shop near Toshodaiji Temple and bought a bottle of the original sake. But I will give it to you separately.

Rice. Adult sweet sake. His wife's family lives in Toyama. She will send it to us for New Year's. We taste it with feeling that it was brewed in the snow in five different places. It is delicious and full of flavor. I'm sure you'll enjoy it ☺️.

It has an aroma and taste like white peaches, but it also has a bitter and complex flavor. The complexity is interesting. It has a clean aftertaste. It is one of the more expensive Kaze no Mori sake, so I opened it on New Year's Day. I enjoyed it without any snacks while thinking of Nara.

Junmai Daiginjo only available at Miyazumi Shuzo. It was a coupon I got from a national travel support program, so I was excited. I opened it for the New Year🤗. It has no aroma, bitterness and astringency prevail, and the taste is elegant. I would like to taste it by itself, not as a food sake. As the temperature rose, the straw-like aroma rose. It is a type of sake with bitterness and astringency, which is rare for a mealtime sake.

A limited brew from Sentori, a Junmai Daiginjo, and for 1,500 yen it's a buy! It has the sweetness typical of Sentori, with a well-rounded acidity and a smooth feel. I thought it might be a little sweet, but it goes well with osechi and sukiyaki! It has a sourness and a sharpness. It has a sour taste and a sharpness, so it is good to be tightened up. The concept of using ancient rice that is not well-rounded in a natural way is great! It is delicious ☺️.

So fresh!!! Fresh and full of sweet and sour delight 😆. I thought it would be nice to have this with grilled oysters. It is rich in acidity, but it is calmer than white wine, so it goes well with it! But it leaves a fishy aftertaste, so it is best washed down with sake, Hiroshima sake 🍶. The sake recommended was Kamoizumi's Nama sake. Western food, after dinner sake, it's versatile! Wait, I'm glad I came across it 😆.
