I stopped by Sogen on a trip to Noto and tasted it and enjoyed it so much that I wrote a book about it in the storefront Gentei at Ishikawamon.
I had not had a chance to encounter it again, but I was waiting for a draft sake, so I bought it.
It is straw-colored, with a pleasant aroma of wood vat, full-bodied, full of acidity and umami, and goes well with sashimi and fatty foods. It was also perfect for potato salad. It is a very good wine.
The taste is very good, but the cut is still relatively good. 😃😃
