This is a Kanazawa exclusive that I came across when I stopped by Kasa Kanazawa. It is a small local sake brewery.
The Junmai Nama-jozo was fresh and fresh, with a pleasant sweetness, acidity, bitterness, and a twist of bitterness that kept me coming back for more. It is a very elegant sake that goes well with a wide range of dishes. It was a very nice encounter in Kanazawa.
