Harushika started this series because of the toji's desire to pass down the wooden vat brewing method to younger generations. It is a four-stage brewing process, and I bought a bottle of Deleted Hashiroshi because of the difference between Nama Hashiroshi and Hayashiroshi, and Hayashiroshi is recommended for beginners.
I was told that Nara sake is sweet, but it develops an elegant syrupy sweetness. I didn't detect much of a wooden vat aroma, but the shape of the bottle suggests it is aiming for sherry?
Harushika has high potential.
