After being intrigued with Kikunoi's Honjozo, Kuroishi sake, which was served at the inn where I stayed for my Tsugaru Peninsula drive and Iwakisan Shrine visit, I had some time before returning the car in Hirosaki, so I visited the rice field art at the end of the day and Kuroishi. When I found out that Narumi Sake Brewery was located on Komachi Street, I couldn't help but go in and try the sake, which is only sold at the store? It was a limited edition, so I bought it. I bought it. The alcohol content is 17.5 degrees and the rice polishing ratio is 50%, and it calls itself Junmai Daiginjo, so I thought they are not too particular about it. It is delicious, with an elegant mellowness that you can feel the high alcohol content, yet it has a straightforward and clean taste! We were recommended to drink it chilled, but we couldn't because of our location, so it was at room temperature, which may have accentuated the mellowness. I would like to try it cold!

Miyazumi Junmai Ginjo is only available at the Miyazumi Sake Brewery. Since I went to ride the SL Banetsu with the Otona no Himitsu Club, I went to the sake brewery for this, which is only available at the brewery, not at the liquor store near the station. It is less sweet than Sharaku. The first sip is fresh and sweet, but it is crisp and tasty! Gradually, the sweetness is accompanied by a hint of bitterness, and it is delicious! I envy people in Aizuwakamatsu!

I bought it almost a year ago, but since I can't buy Tasake very often, I kept it for safekeeping. It is an Akita Sake Komachi, so it has an interesting combination of acidity, bitterness, and various other flavors at the same time. It may have changed in taste after a year. Unlike the special junmai, it can be enjoyed on its own. 😃

It is a special junmai of Tasake, one of my favorite sake. I had not been able to see him for a while, so I carefully refrained from opening it. Finally, I was able to buy the next bottle, so I opened it gratefully. After all, it is delicious! It tastes like this! It is a fresh, mild, yet flavorful, elegant (not too strong) accompaniment to Japanese cuisine. It is also an excellent match for yellowtail sashimi, and drains off the fat. With its pleasant aftertaste and refreshing feeling, it is an accompaniment that I would like to keep in touch with. 😃

I was told that this sake was brewed using the source of the Shima Onsen hot spring. Although it seemed to be far from being a "soft water" sake, I was hesitant to buy it because of my curiosity. It is a food sake with a slight fruity and full flavor, but has the crispness and sharpness of a ginjo-style sake. It is quite good.

I opened a bottle of white wine to pair with melon🍈 and prosciutto ham, but the acidity was too strong, so I opened a bottle to see if Wind Forest would be a better match. The moderate acidity and bitterness are well balanced and go well with Western food. Kaze no Mori is the best.

I visited Tsuruga and stopped by when I went to Mt. The proprietress was very gracious and pleasant and I bought a lot of things I wanted to try. I was so impressed that I bought a lot of things 😊. I was the only one who wasn't driving who was allowed to taste it, so I bought a small bottle of some Junmai, which my partner seemed to resent. Very old-fashioned aroma filled the air! Like a 🫣 very strong Yamahai. But the taste is crisp and clean. I thought it would go well with smelly dishes such as heshiko, mackerel sushi, etc.

I traveled to Fukui. This sake was a top choice as a food sake at a local liquor store. The name "sari" is derived from the image of sushi rice, and the motto of this sake is to accompany and complement the meal as a mid-meal sake. It is a Junmai Daiginjo with 50% polished rice, but it has a clean, refreshing flavor that goes well with less aggressive Japanese food such as sashimi as a mid-meal sake. According to the explanation of the brewery, they were asked by the Ministry of Foreign Affairs to send it overseas, so it is labeled in English, but it is not a fruity type of sake, very good. 😊

I traveled to Wakasa. I wanted to match local rice with local sake, so I tasted Hayaseura, which was recommended to me in Tsuruga, and a small bottle of special junmai, which I could buy, with local seafood and the sunset over the Mikata Goko (five lakes). (The inn brought the sake to our dinner place 👌👌.) The sake was not too rich, even for a Fukui sake, but had a strong flavor that complemented the Japanese food, and I felt it had a special junmai aroma. It is a thoughtful sake that can be used as a mealtime sake and also enhances dishes with a little distinctive flavor, such as simmered dishes. 😊

This is the first time I've had a special honjozo of Isojiman. Lately, the sake brands I want are in short supply, or rather, not seen, and of all the brands that still smile at me, Isojiman is the one that is affordable for dried fish! And when I went to buy it, it was waiting for me! It was my first time to try the special honjozo, but it is more elegant than the honjozo and has a softness that makes you feel no added alcohol, making it a reassuring accompaniment to dried fish and Japanese cuisine. I hope it stays around forever. 😊

A crisp sweetness that reminds me of Jyushiyo. It is a seasonal product from November, and I drank it at a restaurant and found it delicious as a food sake! I thought it was a seasonal product, so I bought what was left? I bought some that were still available. It is summer, but I will treasure it.

I visited Hachinohe. I ordered this sake for dinner at the guest house where I stayed. I think Gotoh is inland, but it is a dry food sake and went well with Hachinohe's thin but slightly sweet simmered dishes and seafood. As one would expect from a 👍local sake. I am glad to have such an encounter.

We are visiting the Shimokita Peninsula in Aomori Prefecture. I wanted a local sake to go with the seafood for dinner, and this was the one recommended at the liquor store. There was also a draft sake available, but I chose the fire-brewed version because I didn't want it to get cold while carrying it around. The sake from Shimokita seems to be for the local market, such as honjozo. I couldn't wait for dinner time to open it and found it to be 😋 delicious on its own. The aroma is mild, but the acidity is firm, yet full-bodied. However, it is not rich in nuance and has a good sharpness. It is said to be a sake to go with fresh seafood, inspired by Hachinohe's squid fishing from summer to fall.

Recently, my favorite liquor store has been carrying less and less of it, so it's hard to buy it. Thankfully, I opened a bottle. It is elegant and delicious. However, its brother Kikusen went better with the menu of the day, grilled hokki-gai and pickled yellowtail with malted rice. We are looking forward to serving it with sashimi.

Kaze no Mori Yamadanishiki 807, I haven't seen it in a long time. 😆 . Perhaps because Kaze no Mori takes good care of Nara's rice, I somehow felt that Yamadanishiki, which is usually the king of rice, somehow didn't fit in. When I encounter it again, it wraps me gently like a peach. However, when I drank it, I found that the acidity, bitterness, and a hint of sweetness of Kaze no Mori are well balanced with the gentle shwashiness. Why is it that I can't stop drinking it? Delicious, that's all I can say. I'm sure you'll enjoy it 😋.

When I rode the Watarase Gorge Railway, I drank it at a local izakaya and enjoyed it so much that I looked it up and found that it was a seasonal product, released in November. I bought two bottles of it. 😆. It is said to be new sake with a muscat aroma, but although it is a nama-shu, is the new sake feeling fading? It's a generous volume because it's a nama sake, but it goes well as a food sake! I like sashimi, but it's an inland sake, so maybe it's not my forte, but I don't mind. It is rich with moderate umami derived sweetness and acidity, but it is crisp and refreshingly nice. It has a kindness that reminds me of someone who is flexible enough to play with you when you want to play with him and leave you alone when you want to be alone. 😄
