We went to Amanohashidate and Ine. A sake shop that stocks all the local Tango sake was recommended to me for the seafood dishes in Ine. The sake is a special sake named 46 in honor of Shiro, a cousin of the brewer who is the president and toji (master brewer) of the brewery, and it is not widely available. It has a slightly yellowish flavor and mild aroma, with plenty of acidity and sweetness, like an adult lemon squash attack, but it soon develops a full flavor and richness that is typical of Yamahai, with a long finish. It is more like a special junmai than a junmai ginjo. However, the alcohol content is 17 degrees, which is dangerous. On a different topic, we stopped by the Ice Breaker Tamagawa Sake Brewery on the way to the restaurant, but the alcohol content of the other sake was also over 17 degrees, but we did not feel the richness of the alcohol, which was dangerous. Are there many Tango sake with high alcohol content? Coming back to the topic, 46 matched it with Kakinoha Sushi🍣, which didn't seem like it would go well with it, but it went well with Kakinoha Sushi, which still had fresh ingredients and plump rice, probably because it was purchased at Kintetsu Kyoto Station! 46's special sake, Bannou, is wonderful👍!

I wanted to go to Ine! I was eager to go to Ine, so I went there during GW. I asked a sake shop that stocks all 12 sake breweries in Tango what kind of sake would go well with the delicious seafood in Ine, and they recommended Kyo-no-Haru's Blue Label (I named it 😅), which I successfully recommended and wrote down! I went to Mukai Sake Brewery later, but they didn't sell it refrigerated, and I'm glad I bought it at the store as a result! I'm glad I bought it at the store after all! It went well with the seafood from Ine! It is rich, but dry and sharp! It is a good match for sashimi, etc., as it melts the moderate amount of fat in the fish 😆. It is very good to drink alone as an accompaniment during a meal because it is so refreshingly dry. It is very good to drink by itself 😊.

I haven't seen a bottle of Tasake for a while, but I did see Kikusen. At room temperature, it has a well-balanced flavor and is very good. It goes well with mayonnaise flavored salad. It has a lot of flavor, and although alcohol is added, it is mildly good. I know this is not much of a review, but it is still good!

I bought this online because of the good reviews on Houou Mita dry. I opened my mouth as soon as I could, so I don't have the impression that it's dry, probably because it hasn't been chilled. 😅 It may be that it is dry among Hououmida, but it has Hououmida's umami, freshness, sweetness and well-balanced acidity. I expect it will show its full potential even more when it is cooled down! I am grateful for the refreshing sake, as it has been hot from early this year 😄.

I was looking for it because I enjoyed drinking it on my travels. I finally found it. The normal Hououmida is characterized by sweetness and fullness, but the bitterness is added from the beginning to give it a well-balanced fullness and richness, and I feel it is a continuation of the Jyushiyo style. It is said that Jyushidai is good at using bitterness, and bitterness seems to be the key. I've already drunk more than half of it since I opened it💦.

Junmai from Kido, the strongest in the cosmopolitan world. As expected, the mouth opening is fresh and you can feel the piquancy while it is fire-aged. Priced at 2,090 yen for a bottle, it is delicious. It is full-bodied, moderately rich, and versatile for Japanese cuisine.

I traveled to Mie and went to a store that carries Jikin with high hopes, but I was told that there is a 10 year wait for reservations for Jikin. 🥲. I bought a limited edition Junmai Daiginjo for the store, a sake only available locally. It is full-bodied and rich, but not too sweet, and has a nice sharpness that would go well with many meals. It has a nice sharpness and a long aftertaste. Mie has delicious seafood, so maybe it goes well with abalone, oysters, etc.? I don't have much experience with it. ☺️

When I traveled to Ise-Shima, I went all the way to a liquor store that carries Jikin, but I could not buy Jikin 😭. When I asked for a recommendation for a sake that can only be purchased locally in Mie, the store recommended Urasashi, which is only available in Ise-Shima, as it goes well with the local specialty, seafood. As it is said to go well with refreshing saltiness, it has a refreshing yet moderately rich and tasty flavor, and you can feel the warmth and welcoming nature of the people of Ise. It is not too much, but adds richness and umami to the food as needed, or drains off the fat, and the casual follow-up is delightful. Good sake from Kuwana, it was a pleasant encounter. 🤗

It is the best accompaniment to Japanese food. It opens fresh and spicy. It is delicious as usual. I am sad that I have not been able to find a bottle of sake in the market recently. I heard that it is easier for the brewer to make a 1.5 litre bottle than a 4.5 litre bottle, but is it decreasing? ( ; ) )

I like this lineup of Kouei Chrysanthemum because the higher lineups have a strong yogurt smell. I opened it with trepidation and was able to open it safely without flying to the ceiling. It is fresh, sour and sweet as expected, lemon squash 🍋. I'm going to enjoy the bottle now!

It was recommended to me by the liquor store as a food sake, so I opened my mouth to enjoy it. It has a mild taste, but the alcohol content is 16%. It has a delicious flavor. I am convinced that this is what the umami of rice is supposed to taste like. It also has a moderate acidity, and the aftertaste is more refreshing than a mellow sake with a lot of umami.

I opened it after 😭 the special pure raw became available. The raw has a soft taste and I want to taste it alone. On the other hand, the standard is a stable food sake. After drinking the raw, a hard image is my first impression. If it is during a meal, it is a good accompaniment with a spicy sharp taste. If you want to have a long-lasting relationship with it, it is the standard.

Sentori no 🌸, thought I couldn't buy it this year, but then I came across something I never thought I would! I bought it last year and it was delicious, so I was looking forward to it. Fresh, spring-like, with a light cloudy appearance, it's delicious on its own! I can feel the arrival of spring. I will savor it.

Fresh rice wine. It had been cherished for a while after purchase, so it had aged at home, but the freshness was playing off. Tasake has a calming image, but we recognized that it tastes good fresh! It goes well with bakke miso, firefly squid and rape blossoms!

It's been a while since I've seen Tasake's special pure sake. The price had been horribly raised, and I was like, "Brutus, you too? I felt so betrayed. 😭 But the taste is fresh, good with sashimi, and even the blister is delicious! I was not betrayed. Almost empty in no time after opening my mouth 😭 I miss my bottle!!!

I heard that alpha type 1 has changed to Bodhi Hashiro this year, so I went all the way to Shorekiji Temple in Nara to learn about Bodhi Hashiro. I went all the way to Shoreki-ji in Nara to learn about Bodai Hashiroshi, which is often thought of as a sweet sake. The sweetness gradually spreads. The fresh sweetness and acidity are enjoyable. It goes well with fatty dishes, both Japanese and Western, as it drains the oil. As a welcome addition, it has a strong presence on its own, and is also a fun accompaniment during a meal.

This is a raw draft orikara sake from Taxi Driver. I visited Chuson-ji in Hiraizumi using my JR East Pass. I wanted to enjoy the afterglow of Iwate on the Shinkansen on my way home and was looking for local sake when I found Taxi Driver at Yamaya, which is not easy to buy. The production date is July 2022 even though it is March 2023. When was it made and why is it 8 months old? The aroma is thick apple juice with a straw smell, followed by a refreshing acidity and a nice sharpness. Seems to go very well with fermented foods! Cheers 🍻, cab driver who wrote down the name but didn't come across it!

I bought this at Akita Station because I was attracted by the Akita-only version. It was served at room temperature, but the mild acidity and youthful fullness were well balanced, and it gently assisted me as a food sake. It has a lingering finish with a nice sharpness. Sake cups are flowing. The sake rice is Ichihozumi. The breweries in Akita Prefecture have been in need of a sake rice that can be differentiated from other regions, and this rice made its debut in 2020. The enthusiasm of the Akita breweries is great, but the development team that responds to their needs is also amazing. I am looking forward to seeing new sake rice one after another.

I bought a bottle last year and enjoyed it so much that I bought a bottle this year. The price has gone up 😭, but it is delicious and does not disappoint. It is not a food wine, but a refined, elegant, acidic, fresh and uplifting wine with a good balance of freshness and freshness. So glad I got to reacquaint myself with this flavor!
