A delicious, spicy sake. But it is also fruity and delicious. Fukushima Racecourse starts at the end of June. We had a delicious Tsumami (bonito sashimi) with it to get through a month of racing. The bonito was fatty and excellent. The "kudokyu-tei" (a dish that is made by a chef who is good at making a dish) that is flushed out cleanly. It's the best, isn't it?

Aizu Musume" is brewed with "Yamadaho". I have had the "Short-stalked boat" version before, but I think this is the first time I have had "Yamadaho". The aroma is mild. The overall balance is good. It has a moderate sweetness, but the aftertaste is dry. I would like to drink it with fish.

I opened a bottle of Kinmon-nishiki that I had bought with Yamazan's Hitogokochi. It has a little bit of a butou feeling and a little bit of a pitipitipitipitipitipitipitipi. It has a strong acidity. It has a good sweetness, and is my favorite sake.

It's been a long time since I've had Shinomine. I often drink it at the store, but maybe this is the first time I bought it. I shook it to mix the oli with the strong carbonation and it turned out to be awry. After letting it settle down, I opened the bottle. It has a gorgeous ginjo aroma. It has a moderate sweetness and umami flavor. The bitterness that comes afterwards gives it a nice sharp taste.

Golf in Aomori. The golf course was near the coast, but I was surprised that there was no wind and it was too comfortable. During lunch break, I chose a sake with the name of the golf course on it. I should have had beer. It tasted just like you would expect sake to taste. It is a memory.

This is also the first Tasake. There are four types in this series: Hachisen, Hato Masamune, Toyobai, and Tasake. It seems to be distributed only in Aomori. I drank this sake while admiring how well balanced it is, despite the sourness of the lactic acidity.

This Toyobai is also a jun-dai that I have never had. The label is said to have a pattern inspired by Tsugaru kogin-sashi. It has a nice aroma and a full-bodied flavor. It is also good with sashimi. There are about 10 kinds of sashimi: kombujime cod, hiramasa, tuna, scallop, hokke, sea robin, salmon, kinki, and 2 more I can't remember😅. Well, the taste is doubled.

Beautiful blue color in the bottle. The acidity is strong and the flavor is good. I don't know why I didn't choose Toyobai as my favorite until now 🤔. It's definitely delicious.

A flurry of business trips to Aomori this week. We had a get-together at a sushi restaurant in Aomori City. I thought I would drink all the local sake I could, but I was bombarded with Toyobai and Tazake. The first drink. I didn't recognize it because it didn't have the usual "Toyobai" written on it, but it was a Toyobai that I had never seen before in Sato Shoten's PB. Well, I have never seen it in Fukushima. The label is also stylish. They also have a junmai ginjo, but this time it was a special junmai. The dryness is the same, but it has a smooth and sweet taste, and a bit chili. It is delicious.
