I'm really into Daishinshu today.
There are many delicious sake from Nagano, but I think I actually like Daishinshu the best.
So I opened a bottle of Daishinshu's Inamitsu.
I don't often look at the room temperature section, but for some reason, my eyes fell on it.
The overall impression is of a thick core, with a smooth, lean body.
But it also has a minerality, which is typical of Daishinshu.
It has a strong flavor, but it is not too heavy, which is one of the characteristics of Taishinshu.
It is a brand that makes you want to follow it more deeply.
I was wondering if I would have any luck this season since there were many reports of getting them at Sake-no-wa, but I was able to pick them up without incident!
It seems that the time of arrival differs considerably depending on the store.
I can't say enough about it!
It's refreshing and just the perfect sparkling for summer.
The only thing is that the stopper is like a crown type, so it is hard to store! LOL!
I am wondering whether I should drink it all up in a day or leave it a little to enjoy the taste as the gaseous sensation settles down. ......

Yamae Nishiki from Shinshu Kamerei!
Yamae Nishiki is the first sake rice I have ever had.
It has a fruity, grape-like aroma.
It also has a lactic acidity.
It is smooth to drink, and although it is not that spectacular, it is beautiful and fresh.
The taste is also somewhat grape-like.
Shinshu Kamerei, which is made from Yamae-Nishiki, has a different flavor.

The aroma is more subdued than Sengoku. The aroma is more subdued than that of Senkou, with only a hint of fruity flavor.
On the other hand, Hououmida has a thicker core. It has a mellow flavor, a graininess, and a slightly classic atmosphere.
Although they are made from the same sake rice, the impression is almost the exact opposite.
Personally, I was a little surprised that Hououmida brought a more dry and mellow taste.
Nevertheless, both are delicious!

I never thought I would see the day when these two breweries would work shoulder to shoulder.

Next up was Kawanakajima Genmai's Harmonic Emotion!
I have been wanting to try it for a long time and finally got to meet it.
The aroma is mellow and grain-like. The core umami can already be felt.
Kawanakajima Genmai is characterized by its rich sweet flavor, and this Harmonic Emotion is no exception.
However, the aftertaste is relatively sharp, making it a dangerous bottle that is easy to drink despite its substantial drinking power.

I've had a sparkling one before, but this is my first time to drink a normal one.
The aroma is citrusy and sour, as is typical of Shinsei.
Since white malted rice is used, the taste is also more acidic, and the aftertaste has a great sharpness.
The sweetness is well balanced, and I found myself emptying my glass.

Sake Komachi is also my favorite sake rice, so I have nothing but high hopes for this one.
Aroma of green apple, with a hint of lemon-like acidity.
The taste has a calm atmosphere typical of Nichinichi. But it has a firm outline, with a delicate sweetness and umami.
Sake-komachi has a gorgeous fruity image, but in Nichinichi's hands, it has such an elegant taste.
It is the perfect sake for the eve of a birthday celebration!
Akabe's summer sake!
Smooth to the taste, but with a pleasantly refreshing acidity, it is truly a summer sake.
It is full of minerality, and you can feel the sake filling up your whole body.
The normal genzai was very tasty, so I did not hesitate to purchase this special one.
The fresh, clear aroma was followed by an elegant yet firm presence of umami and sweetness.
It is still delicious.
I would like to compare it with the normal one next time.
Nagano sake is good, but I also like Fukushima sake!
The last one is Miyamanishiki, which is the name of Kawanakajima Genmai!
I've had this one several times, and I know it's delicious, but this is my first attempt to compare it with others.
When we compared them, we found that Miyamanishiki is also a very rich bottle.
It has a nutty aroma and a sweet, umami taste.
However, it also has a somewhat soft and relaxing atmosphere.
The high alcohol content also made me quite drunk just by comparing one glass at a time.
All of them were delicious, but I personally preferred the Yamadanishiki the best!
The third bottle is Yamada Nishiki!
This is probably the first Yamada Nishiki from Kawanakajima Genmai.
This one also has a different atmosphere from the previous two bottles.
It is made with Yamadanishiki, and has a rich, umami flavor of the royal road.
It has a core, but is not too heavy, and seems to be easy to pair with meals.
Next is the Junmai Ginjo Kinmon Nishiki!
For some reason, I have had many opportunities to drink Kinmonniki sake recently.
It seems to be the sake that Nagano is known for.
The weight of this sake is different from that of a ginjo.
It has a very robust flavor, combined with a nutty, rich richness that makes it very drinkable.
It lingers until the end, making it a bottle to be enjoyed in a relaxed manner.

Let's start with the ginjo.
The rice is Kinmon-nishiki. This is the first time for me to drink Kawanakajima Genmai with aloso.
The aroma is the usual Kawanakajima Genmai.
It has a rich umami and a slightly alcoholic taste.
The taste is a little light, but has a solid core atmosphere.
Aru-soze tends to be too sharp, but this one has a good sharpness and lingering bitterness.
The hot weather continues day after day.
After work on such a day, of course, it's not beer ......, but if you like sake, it's rice and agave!
The harmony of the sweetness of rice and refreshing hops.
Fruity and bitter at the same time, this is the beer of the sake world.
You may be tempted to gobble it down, but be warned that the alcohol content is surprisingly high.
The third summer sake from Kangiku!
Happy to drink all three.
It seems to be the usual Kangiku, but the tone is a bit lower and the atmosphere is fuller and richer.
It is a gorgeous yet relaxing bottle to drink.
