This is a raw Jikoma Omachi that has been aged for about 8 months. It has an aroma of peaches and a taste of freshness like mangoes because of the aging process. The aroma is peachy and the taste is fresh like mango. It is my personal impression that Omachi rice is suitable for aging.

A little bit of umami. It is not a crisp type, but rather a tasty type with a slight aftertaste. This is the first time I have experienced sake brewed with Kawazu-zakura flower yeast, so it was interesting.

It was very fresh and crisp, and at best, it was easy to drink. At best, it was easy to drink. At worst, there was not much shading between the beginning and end of the drink. However, the store offered to warm it up in stages, and I felt that the true value of this sake was demonstrated when it was heated. When it was heated up (about 45°C), it had a creamy, milky taste that spread to the palate, and the flavor stayed in the mouth until the end, finishing off nicely. As an amateur, I hadn't thought of warming nigori sake, so I was impressed by the range of changes.

This is a commemorative sake for the 90th anniversary of the birth of Shinsei's No.6 yeast, and I had it in a Riedel glass. In a regular glass with a wide mouth, the acidity and umami characteristic of Shinsei stood out. I don't know if it's a matter of when to drink it, but I didn't think it was very tasty... For better or worse, it's a Shinsei.

I buy every sake that dot SAKE project puts out here. The fourth one is from Shoki Shuzo. The sake is made from "Watarifune No. 2" + "Ikariban" + "Kijoshu" + "Mutant strain of our own No. 6 yeast" + "Low alcohol" + "Usu-nigori nama-shu". It's a combination of the two, and it's full of everything Marie Chiba wanted to do. I had chicken and burdock stewed with sansho (Japanese pepper) and fried bread with curry powder, both of which were spicy and went well with the richness of the rice in this sake.

It is a Junmai Daiginjo, but it has a little color and a umami-type flavor. I'm not sure if this izakaya kept it in bed or not. It's a good sake to drink as it is, or to drink with strong flavored (tare type) dishes.

This is the Omachi version of Tosa Shiragiku. While the rice flavor was strong, the sharp and powerful acidity of Omachi was well expressed, giving the impression of a refreshing drink. I had it with sushi, and it went very well with it.

My first sake. It is a rare sake brewed with black koji. It is said that black koji contains more citric acid than the white koji originally used for sake, so the accent of acidity becomes more prominent. In fact, when you drink it, you can feel a good amount of richness in the moderate acidity. It seems that the higher the alcohol content, the more punchy the acidity becomes. By the way, this sake is 15 degrees, so it is not that strong, so I think it is suitable for everyone.

Anyway, it was sweet. It was sweet enough that I thought it would be a little gentler than it should be, partly because it was the bottom of the bottle and some time had passed since it was opened. It was so sweet that I thought it would be a little gentler. The aroma is very fragrant, as is the Yamada Nishiki. The best way to enjoy it is to drink a half-gallon of it quickly.

I received a report that it had changed for the better about four days after opening the bottle, so I came to the store and had a Genmai. The aroma was the same as when I first opened the bottle, with a mellow, uplifting scent. The aroma was the same as when the bottle was first opened, with a mellow aroma. I like sakes that change in a good way as time passes after opening the bottle, because it gives me a sense of excitement to enjoy them again and again.

I'm embarrassed to admit that this is the first time I've seen it, but it's very good. I had it warmed up, and the gorgeous aroma characteristic of the No. 7 yeast came out as a rising fragrance. As I sipped it, I felt the sourness that is typical of a traditional sake brewery, followed by a different sourness, and then a dry finish. It's a complex sake, but it's well-balanced and very good.

When I drank the Kon-nen Daruma Masamune before, it was quite harsh on the palate even at room temperature, but this Tora-nen has a softness that makes room temperature just right. Of course, there is a richness unique to old sake, but the balance is good and it goes down easy. It would be delicious with vanilla ice cream.

Jyuoshiyo is a favorite of mine every year. The Dragon's Bastard is my personal favorite of the fourteenth generation. The juiciness is so great that you feel as if you are eating the fruit as it is. It's also very crisp, so you can clearly see the beginning and end of the flavor in your mouth. I'm happy to be able to drink Jyushiyo at a reasonable price every year.

Ayumasamune's Bishamon-nigori... I've never had this before, but I thought it was one of the best nigori sakes I've ever had. The slight foaming, lactic acidity (active yeast?) and the sharpness are all well balanced. I'm the type of person who likes to drink a lot of different kinds of sake when I go to an izakaya, but it's been a while since I've had more of the same. Good sake.

Youho's manga artist label. You can feel the good taste of the rice, but it's also very crisp, so it's a good choice for people who want to start drinking sake. It's fun to be able to taste the crispness of summer and the richness of winter at the same time.
