This is the one I like the most out of all the Jikin. It has the rich taste of Aizan, but the aroma and flavor remain on the palate for just long enough to not be disgusting, which I think is the best way to complete it. The one I got here was a 1 year aged Jijima, but it was a product that added a sense of weight without losing any of the Aiyama or Jijima characteristics.

It is a rare unpasteurized sake from Houraisen and is said to be limited to 500 bottles. When you drink it, the mellow aroma spreads in your mouth. It also smells good when it goes down your throat. I've had many Houraisen, such as Sora and Maka, but this is my first experience. The world of sake is still wide.

I'm not sure what to say, but I'd like to know what you think. It's so expensive that people tend to shy away from it😅. Sora and Mādhi are both pretty much my favorite 😋. I've never heard of it before. I'm sure you'll have a great time.

Hello 🙇 takeshon-san, the izakaya run by one of my seniors from school regularly stocks Houraisen, so I've experienced most of it there lol. Houraisen is very easy to drink even as a raw sake👍.

I think the combination of Omachi and traditional yeast is rare. I wonder if it is the same brewery that makes Zanzo Hourai because the name is similar. It has a good balance of aroma and flavor, which is typical of Omachi. It has the lactic acidity characteristic of a traditional sake brewery, but the bitterness stands out a bit when heated up. In total, I like this sake.

The impression of cocoa (cocoa) from the nose to the finish. When it goes out, there is a strong sake feeling. This is the first time I have had this impression with sake, so it is a strange feeling. However, as you continue to drink it, you will gradually get used to it and you will find it very tasty, and you will want to drink it again.

This is the Jikin I wanted to drink. It has almost no Kimoto-ness (lactic acidity), and a refreshing Muscat feeling spreads in the mouth. I compared it with Akaiwa Omachi, but that one also had no Kimoto-like taste. It seems to have been completed after a lot of trial and error. The enthusiasm of the brewer is conveyed in this work.

It's been a while since I've had this drink, but it's still fresh, clear, and fruity as ever. It's like drinking melon juice. Personally, I think it is better to taste and enjoy it by itself than to drink it with something.

This is the best Yamahai I've had in a while. The balance of acidity and umami became just right, especially when it was lukewarm. I've also had it cold, and it's easy to drink with little of the peculiarity of Yamahai. Impressive level.

I finally got to drink it! It's a sake that I had to search for a long time before I could drink it. It was said to be the smallest brewery in Japan, so no wonder I couldn't find it. lol The balance of sweetness and acidity is amazing. And that sweetness remains gently until the end in a good way. I could understand why it is so popular and not easy to find.

This is a collaboration between Raifuku Shuzo and Marie Chiba of GEM by moto in Ebisu. Everything from the aroma to the feel of it is noble. To put it simply, it tastes like an uncarbonated cider, but it is very dense and has a strong apple taste. Elegant.

Muscat type. It has a very clear impression, but it is so clear that the taste itself may seem faint. Personally, it is the type of sake that I would like to enjoy by chilling it hard and then starting it slowly to enjoy the different stages of the flavor by changing the temperature slowly.

Sake from Yamaguchi Prefecture. It is one of those sake that you want to drink warmed up in the fall and winter. It has a rich aroma with a hint of acidity and fullness. It's best served slightly hotter than lukewarm.
