2023 Year in Review. Given to us by "Japonica Stand." It is said to be a umami type, but does that mean it is so mellow and delicious that it feels like sweetness? Honestly, it was sweet. After passing through the throat, the sourness and the bitterness of the alcohol drained out through the nose. It has an atmosphere that is not overshadowed by dishes with strong flavors, but the aftertaste is refreshing to the last degree.

2023 Year in Review. We had it at "Tai-chan," a popular stand. The first thing I strongly felt in my mouth was the sweetness that I could feel at the back of my tongue. The bitterness of alcohol is just an accent felt on the tip of the tongue. The sake is very easy to drink and tastes great straight away. There is a slight sourness in the aftertaste. Perfect as a drink!

2023 Year in Review. We had it at "Stand Mame Fish" in Minami. Sho Shiki Sensation BLACK NEW Gen" Nama-shu (old-style sake), limited edition for early winter 2023-24, ogara-mi [Sho Shiki Shuzo, Shiga]. While the alcohol taste comes through slowly, what stands out is the sweet and sour taste like yogurt. After swallowing it down, it leaves a lingering aftertaste as it passes down the back of the throat and into the nose.

2023 Year in Review. We had it at "Sake, Sumibi and Roshtan" in Namba. Nabeshima" Junmai Ginjo Harajuku Nama-shu Shiboritate Nama-shu [Tomikuchiyo Shuzo, Saga]. I think Nabeshima is actually heavy in terms of numbness and thumping alcohol. I thought it was made milder by the sweetness mixed with the dark umami taste peculiar to Nabeshima...but it comes strongly except for the mild mouthfeel. It's a sweet sake, but it's a punchy sake, because the bitterness (different from dryness) comes at the same time as the alcohol taste, or as a sake.

2023 Year in Review. We had it at izakaya "Daigoro" in Namba. Delicious oysters and Akita sake. Ryu no Tears Kuro" Junmai Ginjo (AKITA snow country yeast UT-2) [Naba Shoten, Akita) When you take a sip, a gentle sweetness first escapes through the nose. From there, a moderately sour, clean, fruity taste spreads in the mouth. The sweetness you felt at first lingers in the mouth for a long, long time as the aftertaste. It is interesting that the sweetness does not deteriorate at all until the aftertaste.

Mutsu Hachisen" New Year Celebration Sake Junmai Ginjyo Nama-Nagara Sake [Hachinohe Shuzo, Aomori]. The joy of opening the sake you bought for New Year's Day. This limited edition sake is released to celebrate the end of the year and the beginning of a new year. It lacks the fruity flavor of the mainstream Hakusen series. It has a slight umami flavor with a strong acidity. It has a strong dryness and a sharp aftertaste with a bit of bitterness. It is a bit bitter and dry. It goes well with strong dishes that would normally be served with beer. This is a limited edition sake released to celebrate the end of the year and the beginning of the new year.

The taste quickly fades away around the middle of the bottle, but the initial flavor remains as it is in the aftertaste. The taste is a refreshing type that disappears quickly, but the aftertaste lingers on for a long time, like a lingering aftertaste. It is like a gong or a bell. It's refreshing, but has a long-lasting aftertaste. I've never had anything like this before. Sake is really interesting.

I received this sake from a junior colleague at work. It is a special sake that is pressed, bottled, and shipped on January 1, 2023. It is very rare to have a chance to drink this kind of sake, so I am very thankful for it. The taste is basically dry. It has a clean mouthfeel and a juicy, umami taste that floods the mouth around the middle of the bottle. The wine has a dry aftertaste with a good amount of gas. What can I say, it is a refreshing wine with a deep flavor. We look forward to serving you again this year.

This is a wintertime tradition at Senkou. It's called Shiboritate Activated Nigori Sake. When I put my face close to the poured glass, I could smell a faint aroma of... fruits? Fruit or pear? I can smell the fresh aroma like a pear or a fruit. Fresh and bright acidity spreads from the mouth at once, with a feeling of gas, and the slight umami and bitterness of sake are dryly intertwined, while the acidity lingers in the aftertaste until the very end. The taste is nigori-like, but in a sense, it is not like sake. Even if you do not like nigori sake, you can enjoy it.
