2023 Year in Review. We had it at "Stand Beanfish." W Hidahomare 45" Junmai Unfiltered Nama-shu (Hidahomare) [Watanabe Shuzo, Gifu]. The mouthfeel is slightly sweet. When it spreads in the mouth, the bitterness of the alcohol spreads slowly but quite a bit. However, as one takes two or three sips, the bitterness gradually fades away, leaving only a soft dryness from the sweetness, as if one gets used to it or becomes numb to it. With each sip, the drink becomes more refreshing and clear.

2023 Year in Review. We had it at "Stand Beanfish." Yonotori" Junmai Kojo-shu, pure rice with a fresh yeast base [Shinmasa Shuzo, Akita]. Terrible, full-bodied acidity, like biting into a juicy fruit. The alcohol feeling is soft and fluffy along with the final throat hit, leaving the acidity behind. It is said to be characterized by an overpowering sweetness, but when I drank it, I seemed to perceive it as "intense richness".

2023 Year in Review. We had it at "Stand Mame Fish" in Minami. Sho Shiki Sensation BLACK NEW Gen" Nama-shu (old-style sake), limited edition for early winter 2023-24, ogara-mi [Sho Shiki Shuzo, Shiga]. While the alcohol taste comes through slowly, what stands out is the sweet and sour taste like yogurt. After swallowing it down, it leaves a lingering aftertaste as it passes down the back of the throat and into the nose.

★☆☆☆☆ / Cold sake Light on the palate, with a slight spiciness. The aroma is mild and has no smell, even though it is a nama-zake. The lingering taste leaves a gentle sweetness on the tongue.

★★★☆☆☆ / Cold Sake It is slightly cloudy. I didn't feel much of the top notes, but when I sipped it, the aroma swelled. The feeling of chili gas, sweetness and freshness dancing in the mouth is just a splash!

<Soft and Super Smooth Classic The aroma is soft and delicious. There is no fruity flavor at all. The mouthfeel is smooth and watery. It is very light. From there, there is a hint of sweetness with a hint of acidity. It is a gentle, super light classic. It is light. Then, it disappears as if nothing happened, leaving behind a hint of rice flavor and a little bit of alcohol. It is smooth and light, the opposite of the word "impact. As the temperature rises, a bit of acidity starts to appear, but it is still very smooth. No, this smoothness is amazing. There is no sensation of it going down your throat. I have only known such smoothness in Jyushiyo-sama. If I compare it to Ghibli, it is the crab from "Red Turtle". I say this every time I compare it to this work, but the crab is cute. It's really just a crab. It is not anthropomorphic, nor does it play an active role. They are just there. But for some reason, they leave a huge impression on me. <Gentle, smooth, clean, acidic, delicious, and spicy. The aroma is slightly acidic with a hint of rice flavor. The aroma is gentle and clean. The mouthfeel is slightly acidic with a hint of lactic acidity and a slight lemoniness. Lactic acidity and a slight lemoniness. Then the umami comes in softly. It is beautiful after all. It starts with acidity and has almost no sweetness, but it is gentle and has no unpleasant taste at all. The aftertaste is also mildly sweet and disappears softly. It is not flashy, but it is an excellent sake. If I were to use a Ghibli analogy, it would be the members of the science club in "From Up On Poppy Hill. They don't play a prominent role and are not flashy, but they seem to be excellent. Incidentally, one of the two members of the science club is named Takahata. It seems that the director Isao Takahata is the model for this group. Director Takahata graduated from the University of Tokyo with a degree in French literature.
