ナナイSotonomi with my usual partner on February 14.
We had it at "Fish, snacks, and sake" restaurant "Yasen".
Mutsu Hachisen Mutsu Hachisen Houjyun Chou-harai Special Junmai Unfiltered Nama-shu [Hachinohe Shuzo, Aomori].
It has a slightly sweet taste on the palate, and the bitterness mixed with the umami flavor is refreshing and refreshing.
The aftertaste after finishing the bottle, the umami and bitterness with a sense of dryness spreads and leaves the body. ナナイFebruary 14, Sotonomi with my usual partner.
We had dinner at "Fish, Snacks, and Sake" restaurant "Yasen".
Mutsu Hachisen Black Label Junmai Ginjo Hi-iri [Hachinohe Shuzo, Aomori].
The sweetness is tucked away in the back of the bottle and is only slight. The mouthfeel is mainly sour and umami. Bitterness is accentuated to the extent that it does not become unpleasant.
The aftertaste of umami and bitterness extends with a sense of numbness.
This is a very well-balanced sake. ナナイFebruary 14, Sotonomi with my usual partner.
We had dinner at "Fish, Snacks, and Sake" restaurant "Yasen".
Tanaka Rokuugo" Nama Junmai (Yamada Nishiki from Itoshima) [Shiraito Shuzo, Fukuoka].
Sourness, slight umami, and bitterness come in the mouth.
The bitterness mixed with the acidity is the main part of the flavor, but surprisingly it is not so unpleasant and the finish feeling is refreshing. ナナイFebruary 14, Sotonomi with my usual partner.

Mutsu Hachisen Aka Label" Special Junmai Hi-iri [Hachinohe Shuzo, Aomori].
Contrast of sweetness and bitterness in the mouthfeel.
The sharp, rich flavor continues until the mid-palate.
The sweetness leaves after the mid-palate, and the bitterness lingers in the aftertaste.
When I think of Midori-Label as having aged this, I am deeply moved by the mellowness that emerges from this point. ナナイYear in Review 2023. We had it at "Fish, Snacks and Sake Restaurant Hacen".
Mimuro-sugi Summer Jun" Junmai (Yamada Nishiki) [Imanishi Shuzo, Nara].
The process from the first sip to the aftertaste is super speedy and interesting. Rather than a simple dry and refreshing taste, the flavor changes quickly.
The sweetness that is typical of Mimuro cedar is only slight.
The umami and acidity, which seem to be the original taste of this sake, move in a sharp line graph.
The aftertaste is pleasant, with a slight line drawn just slightly. ナナイYear in Review 2023. We had it at "Fish, Snacks and Sake Restaurant Hacen".
Oze no Yukidoke" Junmai "Fish-Yummy Junmai" [Ryujin Shuzo, Gunma].
The concept of this junmai sake is that it goes well with fish.
It is said to be a mellow dry sake with enhanced acidity.
I think it is a umami type of sake, if I were to classify it as such, but I can't say for sure. I think it is, but I can't see a clear picture of it.
It has a certain dryness, though it is a bit restrained in its assertiveness. But there is definitely an umami behind it. But there is definitely umami behind the dryness.
If I were to describe it by lineage, I would say it is umami type. While being wrapped in umami like an aura, the dryness is present from the mouth to the aftertaste.
It is interesting. ナナイYear in Review 2023. We had it at "Fish, Snacks and Sake Restaurant Hacen".
Tanaka Rokuugo" Junmai Namaishiki (Yamada Nishiki) [Shiraito Shuzo, Fukuoka].
This sake also has a clean mouthfeel.
The balance between the restrained umami and acidity is wonderful. The acidity numbs the mouth while the umami lingers moderately.
The lingering high notes resonate quietly. ナナイYear in Review 2023. We had it at "Fish, Snacks and Sake Restaurant Hacen".
Mutsu Hachisen Summer Ginjo" Ginjo Summer Sake [Hachinohe Shuzo, Aomori].
The carally rings on the bottle and label look like ramune. It has a beautiful coolness that is perfect for summer.
Refreshing and refreshing, typical of summer sake.
The middle part of the bottle has a bitter taste like a brewed sake (can we call it that?). The sweetness is accompanied by an alcoholic bitterness that spreads to the palate. As you drink more and more of it, the sweetness only comes towards the end.
The aftertaste is pleasant, with a lingering sense of numbness. ナナイYear in Review 2023. We had it at "Fish, Snacks and Sake Restaurant Hacen".
Kaze no Mori: Sake for everyone to shoot off fireworks THE FINAL Aizan 607" Junmai (Aizan) [Aburacho Sake Brewery, Nara].
It has a dry rather than fizzy taste. It has a pleasant dryness that lingers in the aftertaste. There is a refreshing sourness at the back of the dryness. Fruity sweet and sourness. It was quite refreshing. ナナイYear in Review 2023. We had it at "Fish, Snacks and Sake Restaurant Hacen".
Mutsu Hassen 25th Anniversary Junmai Daiginjo (Hanabukiyuki) [Hachinohe Shuzo, Aomori].
I heard they use more malted rice than usual for the 25th anniversary. I understand, I understand! ナナイYear in Review 2023. We had it at "Fish, Snacks and Sake Restaurant Hacen".
Mutsu Hachisen prototype 2023" low-alcohol, slightly sparkling (Hanabuki) [Hachinohe Shuzo, Aomori].
It is a solid sparkling wine.
White wine atmosphere on the top.
Fruity acidity... No, it's not?
It's rice. At first glance, it looks fruity, but as you drink it, you can feel the sweetness and umami of rice.
The fine effervescence also makes it very easy to drink.
The aftertaste is unexpectedly robust, and acidity, sweetness, and umami remain. ナナイThe umami flavor comes first and the acidity is moderate. It has a strong assertiveness at the mouth, but the aftertaste is refreshing.
By the way, the chef chose this wine to go with raw oysters.
Raw oysters are the best. ナナイIt has a cold acidity and umami that hits you right on the top of the head. The lingering aftertaste lingers in the back of the mouth like a long echo, but the flavor itself is cut off cleanly. It is a strange feeling. ナナイA marriage of sweetness and bitterness. The sweetness is strong to the point of tartness, but the moderate bitterness extends to the aftertaste, so the end of the drink is surprisingly refreshing.
When served with a side dish, it turns into a refreshing drink. ナナイThis is a wintertime tradition at Senkou. It's called Shiboritate Activated Nigori Sake.
When I put my face close to the poured glass, I could smell a faint aroma of... fruits? Fruit or pear? I can smell the fresh aroma like a pear or a fruit. Fresh and bright acidity spreads from the mouth at once, with a feeling of gas, and the slight umami and bitterness of sake are dryly intertwined, while the acidity lingers in the aftertaste until the very end. The taste is nigori-like, but in a sense, it is not like sake.
Even if you do not like nigori sake, you can enjoy it. ナナイBeginner's recommended sweet drink!
Sourness to the point of essence and sweetness to the point of not tartness. Round and easy to drink with no sharpness. The aftertaste, however, is short and numbing, with a strong sense of solidity.
It is a bottle that is low on the threshold, but it will touch you deeply to the core of your body.
It is a sake that will satisfy even the most discerning sake drinker.
This is a sake that will get you hooked on sake, beginners. Maybe.
Recently, it is No. 1. ナナイThis sake is like a mass of sharp acidity.
There is definitely a bitterness in the flavor that is peculiar to alcohol, but the acidity is so strong that it erases that bitterness!
The aftertaste slowly develops, and as it fades away, the mouth cavity is tightened.
It is a single sword of acidity with no unpleasant aftertaste. ナナイApples? Melon? That kind of fruitiness.
No, it's not "fruity" at all. It is more like a bite of juicy fruit.
There is not much of the fizzy sensation characteristic of Mimuro cedar, and after a strong mouthfeel spreads in the mouth, it disappears for a moment and is quickly followed by a lingering, knobby aftertaste. In addition to its intensity, you can enjoy the lingering aftertaste for a long time. It is such a sake.
Even non-drinkers can't help but groan at how delicious it is.
We were able to encounter a good sake. ナナイSweet? Yummy? Not an extreme flavor, but a firm, down-to-earth, slightly sweet umami. There is a hint of sourness hidden in the back.
It's just... It's kind of thick. The flavor is thick.
A lingering taste like a very thick laser.
For a while after the taste arrives, it seems to continue from the mouth without any deterioration. It continues to the spread of the aftertaste and slowly disappears leaving a lingering aftertaste.
That's hard to find! This one! RecommendedContentsSectionView.title
