I had a good impression of it when I tasted it at the brewery festival, but I couldn't find it in the market and finally found it at Daimaru Shinsaibashi. The acidity is quite impressive. It has a mellow flavor of rice and a bit of spiciness. Not too sweet and not too spicy. Flavors of citrus and yogurt-like nuances. I get the impression that it is quite sweet among Tamanomitsu's sakes. It seems to be pretty much in line with the current trend 🤔.

Kaze no Mori WEEKS 2024 is being held at Daimaru Shinsaibashi store in Osaka until 10/6. This is a sake made from Kaze no Mori's dewy leaf wind 507, which is flash-frozen with a special technology and kept for 3 years. Let's take a "superb time trip! The appearance is silver-green, almost transparent. It has a gaseous feel with faint gas bubbles in the glass. The aroma is fresh and gorgeous, with a chili chili wind forest aroma. Fresh pear with fine acidity, ruby grapefruit, nearly ripe banana, and young melon. There is also a beautiful rice aroma about the size of Kamishinko. The gasiness is gentle and the texture is smooth and smooth. A rich sweetness spreads, followed by a mildly stimulating acidity. The beautiful umami of the rice flows with a slight bitter flavor and disappears, leaving behind a pleasant acidic stimulation. The lingering aftertaste is long and gentle. It is beautiful and rich. Perhaps due to its ice-cold storage, there is absolutely no browning of the exterior or aged aroma, and the wine is still fresh and gassy, but the texture and taste are round and concentrated due to the aging process. In a sense, it's like a beautiful combination of aging, and it's my favorite among the Kaze no Mori wines I've had so far. It was very tasty. ☺️

2023 Year in Review. Purchased at Grand Cercle, Liquor Shop, B2F, Daimaru Shinsaibashi. Shin Tsuchida Happy Hill" completely additive-free brewing, raw yeast (land rice cultivated Happy Hill) [Tsuchida Shuzo, Gunma]. We liked Shin Tsuchida K that we drank a while ago, so we chose this from the same brand. Rice is usually grown in rice paddies, but the rice used to make this one was grown in a field of soil! Historically, upland rice is said to be older than paddy rice. The first taste is a dry and mild one, followed by a mellow but firm taste. After that, a mellow but firm umami flavor sinks in. The aftertaste is light and light for a flavorful wine. It is very easy to drink and tastes great with strong dishes such as meat and oily foods.

2023 Year in Review. Purchased at Grand Cercle, Liquor Shop, B2F, Daimaru Shinsaibashi. Mutsu Hachisen Green Label" Special Junmai [Hachinohe Shuzo, Aomori]. It has been aged moderately after being laid down for the summer, giving it a rounded, angular mouthfeel. It has a moderate sweetness with a hint of fragrance and acidity lurking in the depths. The stable, down-to-earth taste continues without any deterioration from the first sip to the aftertaste after swallowing, and slowly fades away, leaving a lingering aftertaste. Come to think of it, this green label is the first Mutsu Hassen that I have ever tasted, and it is the reason why Mutsu Hassen became my favorite.

2023 Year in Review. Purchased at Grand Cercle, Liquor Shop, B2F, Daimaru Shinsaibashi. Shin Tsuchida K" Kijozo-shu Brewing [Tsuchida Shuzo, Gunma]. To be frank, it is a very sweet sake, but at the same time, it has a strong umami taste. This is something I have never had before. Although it is not a fruity type, I think it is something that even beginners can enjoy. This is probably the first time I've had Tsuchida's sake, but it's one of my favorites right away.

This limited edition sake is released to celebrate the end of the year and the beginning of a new year. It lacks the fruity flavor of the mainstream Hakusen series. It has a slight umami flavor with a strong acidity. It has a strong dryness and a sharp aftertaste with a bit of bitterness. It is a bit bitter and dry. It goes well with strong dishes that would normally be served with beer. This is a limited edition sake released to celebrate the end of the year and the beginning of the new year.

I was wondering why I couldn't go to a store that sold them, but I found a variety of Tsuchida at Daimaru Shinsaibashi. It has a lactobacillus-like and greef-like taste. It's not so sparkling, but slightly effervescent. It tastes sour and sweet. I would have liked a little more sparkle 🤔.

Bought this after tasting it at Daimaru. Is it my imagination that the pattern of the label looks like something🤔? It has a density that reminds me of doburoku. The taste is refined and clean for a nigorizake. Good balance of sweet and spicy. A little citrus. There is also a good taste of rice. I think the sweetness increases a few days after opening. I think 1980 yen is cheap for using a centrifugal separator and milling 50% of the rice.

I don't know of any nearby stores that carry it (I know of three, but they are hard to get to because of poor access and irregular delivery), so I haven't tried Eiko-Fuji in a long time. It's a quiet wine, but it has a berry-like sweetness and flavor that comes out afterwards. I wish it was easier to buy.

The sake we tasted had been opened for a long time, so the sweetness was emphasized, but the freshly opened sake had a good balance of sweet and spicy with a hint of spiciness. It's also refreshing. I wonder if the green bottle and label is because it's from Midori City? When the temperature is close to room temperature, the sweetness comes out. It's not good to cool it too much. The aroma is a sweet honey-like impression. It also has a nutty taste in the second half. It's my first time to try Akagisan because it's not common to find it in Kansai, but it seems to be a major sake sold in convenience stores and supermarkets in Gunma.

諸事情により現在は他の蔵で醸造しているそうです。口に含んだ瞬間は軽い水の様な入りかただけど後から吟醸香が強めにやってくる。結構好きかもしれない。もし生があれば飲んでみたい。
