Year in Review 2023. We had it at "Fish, Snacks and Sake Restaurant Hacen". Mutsu Hachisen Summer Ginjo" Ginjo Summer Sake [Hachinohe Shuzo, Aomori]. The carally rings on the bottle and label look like ramune. It has a beautiful coolness that is perfect for summer. Refreshing and refreshing, typical of summer sake. The middle part of the bottle has a bitter taste like a brewed sake (can we call it that?). The sweetness is accompanied by an alcoholic bitterness that spreads to the palate. As you drink more and more of it, the sweetness only comes towards the end. The aftertaste is pleasant, with a lingering sense of numbness.

Looking back at the year 2023. We had it at "Ureshii Waramasa". Mitsui no Kotobuki Summer Jungin Chicara" Summer Sake Junmai Ginjo (Yume Issen) [Mitsui no Kotobuki Shuzo, Fukuoka]. The nose is filled with the feeling of brewing from the first sip. The aftertaste lingers at the base of the nasal cavity rather than on the tongue. I asked for this sake because the store owner said it would go well with oysters, but the brewing feeling is gone from the sake, and the unpleasant iron-like feeling of the middle product is gone from the oysters. It's a refreshing type of uin-uin.

I thought it would be a slightly sweet, refreshing summer sake..! But it's different when you drink it with Sashimi, isn't it? When you put Sashimi in one cheek, and put this in your mouth... it's a wonder, it's turned into a refreshing SASHIMI with a little sweet aftertaste. It leaves a sweet aftertaste.

It has a lactic or sweet and sour taste at the mouth, but the taste itself cuts through quickly. The astringent taste of the sake intensifies before the taste is cut off. It is a little different from a refreshing type of sake. The astringency of the sake lingers in the mouth for quite a long time. According to my partner, it is "sweet and sour and astringent. 2023 Year in Review. Purchased at Daimaru Shinsaibashi Liquor Shop Grand Cercle and served at home. Mutsu Hachisen Gin Label" Ginjo-Arabashiri Nama-no-Hajime Sake [Hachinohe Shuzo, Aomori]. It has a slight sourness on the palate, but soon a gentle sweetness spreads in the mouth. As the sweetness fades away, the numbness and dull bitterness of the alcohol asserts its presence at the throat, and the image of it sinking down with its weight.

2023 Year in Review. We had it at "Stand Beanfish." Yonotori" Junmai Kojo-shu, pure rice with a fresh yeast base [Shinmasa Shuzo, Akita]. Terrible, full-bodied acidity, like biting into a juicy fruit. The alcohol feeling is soft and fluffy along with the final throat hit, leaving the acidity behind. It is said to be characterized by an overpowering sweetness, but when I drank it, I seemed to perceive it as "intense richness".

The first sip had a slight sweetness on the tip of the tongue, followed by a moderate alcohol content in the middle. Then, in the mid-palate, there is a hidden sweetness surrounded by a moderate alcoholic bitterness. Finally, the aftertaste is a mixture of tastes at the back of the throat, and the bitter-sweet taste falls toward the stomach. The gravity and buoyancy of happiness.

It has a dry rather than fizzy taste. It has a pleasant dryness that lingers in the aftertaste. There is a refreshing sourness at the back of the dryness. Fruity sweet and sourness. It was quite refreshing.

Year in Review 2023. We had it at "Fish, Snacks and Sake Restaurant Hacen". Mutsu Hachisen prototype 2023" low-alcohol, slightly sparkling (Hanabuki) [Hachinohe Shuzo, Aomori]. It is a solid sparkling wine. White wine atmosphere on the top. Fruity acidity... No, it's not? It's rice. At first glance, it looks fruity, but as you drink it, you can feel the sweetness and umami of rice. The fine effervescence also makes it very easy to drink. The taste and mouthfeel are softly sweet and sour. The sweetness is slight, and the acidity is strong but not too assertive, and it goes down smoothly. A sense of speed? The aftertaste leaves a strong atmosphere at the throat. The main taste itself is classified as sweet and fruity, but the dry and refreshing impression may be stronger.

Blaxploitation Kai" Junmai-shu (Junmai-shu made with white malted rice) Nama-shu (Akita Sake Komachi) (Shinmasa Shuzo, Akita) It is thick from the first sip! It is so luxurious that it is like drinking undiluted sake. I ordered this series because I heard it had a strong sweetness, but the first thing that jumped out at me was the acidity. The first thing that jumped out at me was the acidity, not sharp, but mellow. After that, a rich, matured umami flavor comes in.
