Kisugi Sake Brewery in Unnan City
In Osaka, Haretoke sells this sake, but I've never had it because of its dry and heated atmosphere 😁.
Polishing ratio 55%, Sakonishiki from Unnan city, 15-16 degrees, Sake degree +8-9

It is a bit difficult to drink due to the graininess and complexity of the flavor. The second half is sharp and dry.
It is still a heated sake type.

Left is the taste of aging
Aroma: Smooth attack. The taste is firm and delicious, but the mouthfeel is light. It goes in smoothly and is light and full-bodied.
It is sweet but has an ABV of 19°. It tastes like a port wine, so you can't be too careful.

(3) Simaneya & Minami Pacific
Shimaneya opened late at 3:00 p.m., so we decided to go in.
As the name suggests, Simaneya is a restaurant serving Shimane sake and snacks.
While we were waiting in line, the owner kept saying to us

When you take a sip, only the matured taste of the sake leaves your nose, and the rest is refreshing. In a sense, it tastes only of maturity.
I had it at a restaurant that serves smoked food, and it goes well with smoked food. The flavor and the aroma that goes through the nose are also very pleasant. The taste and the aroma that passes through the nose fuse well in the center of the head.

For the first time in the new year, I decided to use the red color of Big Boss for good luck.
