2023 Year in Review. We had it at "Stand Beanfish."
Yonotori" Junmai Kojo-shu, pure rice with a fresh yeast base [Shinmasa Shuzo, Akita].
Terrible, full-bodied acidity, like biting into a juicy fruit. The alcohol feeling is soft and fluffy along with the final throat hit, leaving the acidity behind.
It is said to be characterized by an overpowering sweetness, but when I drank it, I seemed to perceive it as "intense richness".
