Shinryoku" mellow top-sen [Tamamizu Shuzo, Fukuoka].
It is refreshingly dry. It has a sweetness peculiar to rice and brewer's alcohol that explodes in the back of the throat and escapes into the nose. This is also quite interesting. ナナイLooking back on the year 2023. We had it at the "Sake Kai" main restaurant.
Haneya Summer Junmai Ginjo" Junmai Ginjo Nama Sake [Tomikiku Shuzo, Toyama].
The first sip had a slight sweetness on the tip of the tongue, followed by a moderate alcohol content in the middle.
Then, in the mid-palate, there is a hidden sweetness surrounded by a moderate alcoholic bitterness.
Finally, the aftertaste is a mixture of tastes at the back of the throat, and the bitter-sweet taste falls toward the stomach.

Amabuki I LOVE SUSHI Shinuchi Junmai [Amabuki Shuzo, Saga].
These are also refreshing, ultra-harsh. It goes down smoothly.
There is a bitterness, but it is only slightly felt at the back of the tongue, so it can be drunk without being unpleasant.
