Year in Review 2023. We had it at "Fish, Snacks and Sake Restaurant Hacen".
Oze no Yukidoke" Junmai "Fish-Yummy Junmai" [Ryujin Shuzo, Gunma].
The concept of this junmai sake is that it goes well with fish.
It is said to be a mellow dry sake with enhanced acidity.
I think it is a umami type of sake, if I were to classify it as such, but I can't say for sure. I think it is, but I can't see a clear picture of it.
It has a certain dryness, though it is a bit restrained in its assertiveness. But there is definitely an umami behind it. But there is definitely umami behind the dryness.
If I were to describe it by lineage, I would say it is umami type. While being wrapped in umami like an aura, the dryness is present from the mouth to the aftertaste.
It is interesting.
