February 14, Sotonomi with my usual partner.
We had dinner at "Fish, Snacks, and Sake" restaurant "Yasen".
Mutsu Hachisen Black Label Junmai Ginjo Hi-iri [Hachinohe Shuzo, Aomori].
The sweetness is tucked away in the back of the bottle and is only slight. The mouthfeel is mainly sour and umami. Bitterness is accentuated to the extent that it does not become unpleasant.
The aftertaste of umami and bitterness extends with a sense of numbness.
This is a very well-balanced sake.
